Blood Angel Terminator with Lightning Claws

Would a unit hit by a barrage weapon receive any of the bonuses from night fighting and could you target unit more than 36" away from the weapon? This came up as a question in a recent game and after reading both rules I'm am unsure.

Yes, it would get 4+ cover save in the open, or improve any area terrain cover save it has by 3.

The reason it came up was because it says to work out cover and wounds assume that the shot was coming from the center of the blast marker, this caused a bit of a disagreement between me and another player.

You cannot target over 36". The rule specifically states units beyond 36" cannot be targeted. It does not say that units beyond 36" cannot be seen. If this were the case it would block line of sight.
Units would not benefit from the cover applied by night fighting since cover is determined from the center hole.
So yes the opponent would not get any bonuses to cover from night fighting but you cannot target anything over 36" due to night fighting.

Stealth/Shrouded still give a cover save even if you're in the open. Even determining saves from the blast marker, they should still get whatever night fighting bonus they receive.
To clarify how my group plays it, you would pick the target and measure range. The unit would gain Stealth/Shrouded for that shooting attack based on the distance from the shooting unit. Determining saves would most likely be as if they were in the open, due to cover being drawn from the template.
Night fighting effects are normally determined when picking the target, so it's a discrepancy between whether determining cover saves from barrage is the same as determining night fighting effects from barrage.

If there was a wall between your models and the center hole you would get that cover, but it would be too close for the Night Fighting bonuses.
