Here's the RAW for the situation:
The rules actually don't have any strict proviso about not causing damage on vehicles out of line of sight like they do with regular units. Yes, you must be able to see the unit you're firing at with the blast, but if it scatters and ends up over a vehicle that is completely out of LOS there is nothing I can find in the rules that says this damage wouldn't be resolved normally.
Now, when you get to taking a cover save, the boosted +1 cover save does require the firer to see a different arc of the vehicle than they're facing (and yes, you always use the Armor Arc that the firing model is in regardless of where the blast ends up)...which doesn't apply in this situation (as you can't see any part of the vehicle being hit). Although, the Armor Facing that the firer is in is most definitely at least 25% obscured, so a normal obscurement save would be used RAW.
So that's the RAW:
A vehicle out of LOS can be hit and damaged by an errant blast and it gets a regular obscured cover save.
However, I think RAI it should probably get the boosted cover save in this case. That's how I'd lobby to play it regardless of the RAW.
