I can't find anything that explicity answers this question. Can monstrous creatures fire all their weapons on overwatch when charged? What about multiple templates? A tyrannofex with acid spray and a thorax swarm?

Kind of and yes, (only because Monstrous Creatures can only fire two weapons in any given turn) although you only get D3 hits per gun in your situation. My Carnifex with Two Twin-Linked Devourers gets 12 shots when it overwatches. The Twin-Linked is also applied so I reroll everything that isn't a 6.

MCs with 2 weapons can fire both on overwatch. A tyranid with a thorax swarm can use it as well. So your Tfex can potential fire 3 weapons, acid spray, thorax swarm and stinger salvo (if you have that weapon load)

Yeah...those Nobz were not happy when they charged my T-Fex with Stinger Salvo and Fleshborer Hive....They were really unhappy, after I rolled 16 6's, plus 3 additional hits with the Thorax Swarm.

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. In fact, the mere act of opening the box will determine the state of the cat, although in this case there were three determinate states the cat could be in: these being Alive, Dead, and Bloody Furious.

Monstrous Creatures can fire 2 weapons. Thorax Swarms can always be fired in addition to any other weapons the model can fire. So (in my scenario) the Tyrannfex can fire
1. Fleshborer Hive
2. Stinger Salvo
Thorax Swarm (which can always be fired in addition to other weapons)

Except, Carnie's can't take it. Only Hive Tyrants and Tyrannofex's (which come with it).

Acid is great vs. Orks as well, especially Enfeebled multiwound ones. I should try the fleshborer hive sometime.

Sure, it should kill 5 boyz; assuming they are not in cover and all within the paltry 12" range.
Acid Spray is cheaper, has a longer range, ignores cover saves, better AP, and only needs to cover 6 boys to get the same damage.
The best use of Fleshborer Hive, is for converting Tyrants and Fexes as TLDevourers...
