Hello Dakka,
Currently I am entered into a campaign that is being run by my local store and there is a player who is using his GK and so far none has beaten him and he has refused to play against me for fear of losing yet I am unsure as to why he could think that as I am unsure as to how I am going to beat him.
So can I get a little help please?

How many points are we talking about?
As a GK player, I fear two things: quantity of fire and quality of fire. You make me roll enough saves, I will start failing them. Quantity, however, would be hard to do in small points games, unless you have lots of template weapons. So, that brings you to quality. Deny their armor saves whenever possible. AP1 and AP2 works wonders, if you can bring enough of it in a small points game.

This. Can't really advise you without more information. Point limits, game types, even the type of GK he plays would help. There tend to be four variants built on different troop options. Paladins Purifiers Mutts (A mix terminators and GKSS) IQ Henchmen (in fashion) Facing a henchmen army will be fairly different from the first three.

I play nids, and most nid players are scared of GK, but not myself, take a few tervigons a venomthrope and some gaunts, charge gaunts as tarpit using venoms cover save when he pelts 24+ shots into you from overwatch, re-enforce every turn with new spawned units, keep Tervigon out of combat but close enough to give fearless, FNP and toxin sac bonus to little guys...

I checked the OP's other threads and it looks like you play Guard.
As Stated above, Grey knights have a variety of effective builds, but they usually have a few common weaknesses:
Low (ish) Model Count
Short (ish) Range
Grey Knights are a MEQ army. Their units are versatile and have high damage output, but they pay points for that power. Usually the Grey Knight player will have less models on the board than a "Normal Marine" list. [depending on the build, they can have some of the lowest model counts in the game].
If you can strike the first, hard blows against them, a GK army can crumble before it has the chance to deal damage back.
Grey Knights units have a Decent Range (move and shoot at 24") but it is not spectacular. If you are able to stay out of range, and deal damage back they can have a difficult time.
Grey Knight, usually rely on their vehicles for damage at long range (Dreadnoughts and Razorbacks). If you are able to deal with the long range vehicles, then pound the infantry at range, it will be very difficult for the GK to respond.
The other option for Grey Knight players is to run fast moving units (Interceptors, Tele-Knights or Storm Ravens) to counter their short range. These units are effective, but expensive. They usually need to expose themselves to enemy return fire in order to deal damage. If you can weather the first shots from them, then crush them with return fire, it is an effective counter.
I noticed in your post on the Army List sub-forum you are running a LR-Demolisher. If the GK player is running Paladins, you are taking the HARD counter to that unit. That may be a reason he is unwilling to play against you.

Yes I run Guard and the GK player at my store is using mordrak and terminators and a dreadnought and a razorback.

If a player is specifically picking and choosing players to take on base don his perceived ability to take them on, me might be a bit of a TFG.
Basically, it kinda sounds like he COULD be the store bully. He runs a "tournament" list, then picks on the newest, least experienced, or "fluffiest" players to play so he has a very high chance of winning.
Someone who is not willing to play you because he MIGHT lose, sounds like they might not be a nice person or well equipped emotionally to handle losing.
However, he could just be trying really hard to win if there are prizes or the like involved. It is difficult to tell from second hand information on the web.

there's no prizes involved this campaign is for fun and i don't take well to being told someone is scared of losing to me so won't game with me and he isn't a bully he's just a stuck up posh kid i guess is the best way to describe him.

I like that idea but I only have 700pts to use this week then it increases by 100pts each week.

Do you have a non-Yarrick-Commissar?
You could easily fit another Demolisher in your list if you would run a Lord Commissar:
HQ
Lord-Commissar
- PW
Troops
Veterans
- 3x Melta
- Chimera
Veterans
- 3x Plasma
HS
Demolisher
Demolisher
This would be 680 points. With the 20 points left you could either get HB sponsons for one Demolisher or upgrade the Meltas of the first Veteran-squad into Plasma if you think the Termis could be a problem.
