I received an older Land Raider from a friend and I have had it soaking in Super Clean for about a month or so because the paint was really thick, removed it and began cleaning it tonight to find that the kit is made of a white plastic, did GW ever use white plastic for their kits?

They did in the RT days, yes. (well, a very light cream colour, anyway)
In fact, they also used blue, green and grey. Basically whatever plastic colour was available at the time of casting.

Not to mention the colored plastics used in the Space Hulk game.

Hmmm... I am going to have to put this land raider back together and see, I don't believe this is an old model, it looked pretty modern to me when I first saw it but I could be mistaken...

They used to use Blue, green, grey, beige (two shades) and white. Space marines came in Blue/green and beige depending on which batch of RTB001 they were (I've had all three). Imperial Guard plastics (RT) were pale grey, certain fantasy regiments (the Dwarf/Dark elf/other combined regiment box I can recall) were white. The Rhino and Land Raiders were beige - but the Rhino kit was also later done in grey (same sprues, different material). The Why is because they had their plastics made for them by the same mob who subcontracted the plastic bits for matchbox cars - and to get it cheap, got the sprues done in whatever coloured styrene was available at the time. This was before the time they had their own plastics moulding capability, and indeed, weren't even thinking of doing many vehicles or plastic kits.

I'm OVER 50 (and so far over everyone's BS, too).
Old enough to know better, young enough to not give a ****.
That is not dead which can eternal lie ...

I've seen catachans from the same battleforce in an extremely light grey, almost white, color along with a more neutral grey color. Simple question: does the land raider have track guards & a front hatch? If no then it's likely a rogue trader era land raider & you're lucky to have it.

No it has a front hatch, it might have had track guard but my friend had removed them and installed some resin reapers in their place that he later removed...

They used to use a lighter grey until recently. I think?

I have some old Tau and Tyranid bits that are a lighter gray than what GW sells now, but this could be because of age? Pics would help.
