How do you guys usually play it when you wreck a tank but it doesn't explode? For example I take the skimmer off the base and I place it on the board. Do the say fire warriors behind it now get out of LOS? (since the stand went away and you can no longer see their feet/legs)

I've always taken wrecked skimmers off their stand.
If you cannot see them, than yes out of LOS

that, for me and my friend it becomes a terrrain, so if the firewarriors are behind the dead skimmer then yes it is out of line of sight.

I've glued my stands into my Wave Serpents. When it is a wreck, I put a wreck counter on it and don't move the model. It ensures I don't acidentally reposition the model in the event my opponent moved his models in relation to my tank.

No earth shattering, thought provoking quote. I'm just someone who was introduced to 40K in the late 80's and it's become a lifelong hobby.

Skimmers have their bases removed while other tanks are just left there. That's all you do, you don't remove guns, you don't move parts of the vehicle, you just count is as terrain.

If bases are glued, you can always eyeball it for LOS blocking.

Does the rules actually tell you to remove the flying stand from Skimmers?

Remove skimmers from their stand. They now are Dangerous and Difficult Terrain. If it blocks LoS it blocks LoS.
