I made this list cause I never used mad dok before and was wondering if this would work out

At that few storm boyz it is probably not worth it. This seems to be a really wonky ork list. I would suggest you check out this blog.

Just keep in mind that guide was
written for the 4th edition ork codex to be used with the 4th edition rulebook.
so its several editions out of date.

I made the mistake of applying a 5th ed tactica to my Orks and now I have a dozen useless stormboyz lying about =(

Add lootas. You don't want 2 100+ point HQs at 1000 points. Give your Orks some survivability (KFF Mek, Transports, full sized squads ...something).

I'd pick a speed. Fast (Bikes/Trukks), Normal (Wagons/Planes) or Slow (Footslogging) and apply it to the whole army. You don't want waves of guys at different speeds arriving at different times.

Decide on a theme, a speed for the army, and make a list from there.

But I wanna try to revolve this particular army around mad dok
I could take out the war boss and just keep mad dok as my single hq choice

Stormboys have lost a lot of effect as they're ultimately expensive boys that will die on overwatch. The kommandos are now no longer a viable 1st turn CC klaw so have fallen out of favor as well. Really the only options for them is to take a minimal 5 man unit with specials (burnas) and do a 1st turn suicide run or take snikrot and outflank which is a bit situation dependant for its success.
To focus an army around grotsnik, take a unit that will benefit from him. For 1k points, grab maybe 3-4 meganobs and attach the dok, give the cyborks as well so you've effectively got W2 FNP terminators. With that either run them in a faster trukk list of them and trukk boys, or a foot list. Trukk lists close in fast and you could probably get the MANZ dok unit and 4 other trukks. The disadvantage is the MANZ would be targeted first and will flounder if stranded alone, so careful placement is in needed. In a foot horde list you've got heaps of wounds to soak up hits and you'll generally all hit simultaneously but of course you're a lot slower. From the look of what you have currently it looks like a more foot slogger approach.
I'd probably just grab the 4MANZ and dok plus 3x20 boys units with bp, pk and big shootas as well (so the MANZ can keep up) and 10 lootas.

Ill give it a shot I guess my bro loves to run imperial guard and sit in a corner so if I run that army I guess I'll hope he doesn't do that. It's gonna take like 3 turns to get there while he's shooting a demolisher cannon and 9 las cannons at me plus multilasers and heavy bolters
