Just today i was looking at the tyranid 4th edition codex, it had a feth load of war gear options and weaponry. What happened to all of that choice in 5th edition tyranids? Do the past codexes of other armies have a lot missing war gear today as well?

No. Cruddace didn't realize tyranids were about evolving, so thought he needed to make Xenomorph the codex. Daemons had more wargear than tyranids...DAEMONS!

It just seems like Cruddace doesn't add a lot of options in his books. Perhaps I am wrong on this, but I find that the Imperial Guard and Tyranid books do not have many wargear options.

I hope the next Tyranid codex has more customisability, especially with the Carnifex (a points reduction would be nice as well)

Jervis in his infinitesimal wisdom started the trend of taking the wargear out of books a few years ago in one of the crappier dark angel codex.
He said something to the effect his young son was confused or having trouble with all the options so he kindly dumbed it down for all of us.

Apparently Cruddace thinks that Tyranid players are dumb, ergo we can't handle 18 more biomorphs for a Carnifex. There's a reason why Tyranid players despise the man, he took the beautiful customizibility, excellent fluff and immensely flexible 4e Tyranid army and turned it into an unforgiving, bland, and utterly rigid generidex. Oldnids could do quite well with pretty much any build. New nids die horribly if they deviate too much from the "Flyrant and Tervigon spam" model and even with that they're mostly just averagely mid-tier. As for Elite, Heavy support, and Fast attack slots? Cross out any elite that isn't the Doom of Malan'tai, a Zoanthrope, or Hive Guard because they're ridiculously situational.
Ignore any heavy support that isn't a dakkafex, trygon, or biovore because the others are firmly in the "would be nice if they didn't cost you an arm and a leg" category. For fast attack, gargoyles and harpies are really the only things here worth mentioning, spore mines suck, skyslashers also suck, and shrikes and raveners will splatter at the slightest whiff of S8. As for troops, Hormagaunts took the nerf to fleet and random charge ranges really badly and Overwatch is just cruel to them. Genestealers were neutered by the nerfs to outflanking and the addition of overwatch and now mostly serve as meatshields for brood lords. Warriors as always explode at the mere mention of S8 being on the table. Devilgaunts can do amazing things, but ignore spike rifles, stranglewebs, and spinefists because they are unreasonably terrible, termies these days are mostly just a way to field more Tervigons.
On HQs, Tervigons are almost always going to be in troops outside of specific Tervigon spam lists, they're excellent by anyone's standards, but they're even better with lots of little bug minions. Primes remain quite good but the need for Flyrants has relegated him down to back up in death stars or for really low points games. Tyrants are your only source of skyfire, one specific build of Tyrant at that, which means if you have even the slightest hint of facing fliers you need them. They're good on their own merits but the flier dominated meta has made flyrants autotakes. Most biomorphs are in the "would be nice if they weren't so expensive" category, your call if you want them or not.
The Swarmlord is still one of the best beat sticks in the game and with the right rolls for psychic powers he becomes THE best beat stick in the game, Abaddon can go feth himself. There is pretty much no reason to not try to roll for Iron Arm and Warp Speed/Endurance. It's not like any of his psychic powers besides Paroxysm were any good. Pair with tyrant guards if you have the points. On Tyrant guards, they're sadly underrated, being essentially mini monstrous creatures whom I still can't fathom as to why they don't have 2+ saves when the fluff would point to that being sensible. They cost a pretty penny, but they don't need to follow the Tyrant around so you can still have them in flyrant lists. On that note Swarmy+triple guard+Prime=One hell of a beat stick.
