I actually was already planning to use some Ushabti for broadsides. They're another model set I've wanted an excuse to use for a while too haha.

The feet thing is one of the main things that's currently poking my brain, the other being the tail. The only alternative I've thought of thus far is to use something like Dreadnought feet but my gut tells me that won't look too great. I really like the fluff idea about it being the mind of a former pet.

Your suggestions are right along line with my intentions to make things clear to an opponent yet still be a cool conversion. I was actually looking at ways to use a pair of Lychguard shields to represent the Riptide's invul save.
