I'm currently working on a tau stealth army and i was wondering if it's technically okay in the rules to use a model that's not meant to be an HQ as an HQ, such as a XV15 or XV25, or a decked out pathfinder/fire warrior.
I was also wondering if you guys know of any models that would work better than what I thought of as a Darkstrider replacement.

Well it highly depends on who you wanto to play with. Just friendly games or official games. The more official the games get the more problems you'll run into. Unless your model is really amazingly converted and the "rule of cool" starts to apply.
For me personally it comes down to how easily those counts as units can be picked out next to normal guys. Wysiwyg is one thing to consider. Does the wargwear of your model represent the wargear of the model that it counts for? Did you paint him differently and set him up on a specialized base? Did you modify his armor to make it special? If you actually put effort into making the model suiteable for the task i would have no problems with it. But if it just ia a random model x that you grabbed out of your box that is now a model y on the table then i don't know if i'd accept it.
And i'm not really familiar with the Tau but couldn't you just kit out a normal fire warrior with a specialized weapon and maybe add a stealth cloak or something and put him on a higher base to make him stand out some more?

I was thinking about something like that- Get a pathfinder, give him a carbine, put him on a fancy base and trim him up with some seals and gold. Im going to try a grassland-themed army, so I'm trying to think of how to make a fancier grass base. Lol.
The main reason I want to convert Darkstrider so bad is that his head is so terribly ugly..
Back on the topic of trimming, I was thinking of adding gold on to the creases of the armor. Make him look more HQ-Like.

Well if you are playing a stealth themed army blinging him up might collide with him beeing stealthy.
Like i've said maybe add a cloak to him. I've done something similar with my scouts. They all have dark grey armor and a grey camo pattern. The only color are the heads and the red shoulder guards. But they all have cloaks so that they can pull the cloaks over the red bits to be harder to spot.
Bling him up but on spot where he theoretically could pull his cloak over quite quickly to hide the bling.
Maybe use these.

Those are ment for IG but they also might work for tau models.
As for the base you could try roughed up cork to build up his base and add moss and grass on top. Or add a tree stump or something like that.

I just decided to take a look at the cloaks and now I want them for all of my army..
I think I'll paint Darkstrider's cloak black instead of green, and I'll paint the army's symbol on the cloak in green. Shows he's in charge.
I'm not putting cloaks on my XV stealth suits though. Fire warriors and pathfinders only,
