Manticores tend to be the standard ordinance for competitive lists, but I'm sure basilisks work too. Leman Russ wise, I have only seen two variations at tournaments which would be the plasma cannon with plasma sponsons or the barrage gun one.

Vanquisher with good 'ol commander Pask turns that tank into an armor death machine. Its just a shame that the Vanquisher lacks AP1
The plasma LRs are great, but they are SUPER expensive, I have seen people go for demolishers, but they have a very short range, but I believe they ignore cover.

For me, two Executioners with lascannon and heavy bolter sponsons. That is at a 1850 point list. Can take on alot of different things. Takes out infantry, light transports, and sometimes even a flyer.

really depends on what race you are fighting against. For example, against horde armies like orks and tyradnids, you'd want to bring punishers. However if you were going against tau or something, I'd go with Vanquishers and basilisks, something highly ranged.

You're just tailoring for a different circumstance, i.e. a tournament. You still have some idea of what you could expect and make list choices based on that knowledge.

The most jack-of-all trades tank is the bog-standard Battle Tank imo. Str8 AP3 Ordnance Large blast knocks down troops, knocks down light armor, and can chink away heavy armor.

Well the rule of thumb I follow for Guard is that their tanks are better at killing infantry, and their infantry are better at killing tanks.
That said, my 1850-2000 point Guard lists always include a Demolisher and a Pask Vanquisher with lascannon. I'll sometimes sub out the Vanquisher for a LRBT, but that's mostly for flavor.
Chimeras with veterans with melta are a better anti-tank unit than any other tank (not referring to the Vendetta, here, of course, as it is the King of the Guard dex).

There's two schools of thought on the LRBT, some say its useless, others that its a great TAC tank. I tend to follow the latter school of thought. Yes there is usually a tool in the guard codex that does the LRBT's job better, but for 150 pts that can kill whole squads at the time its pretty damn good.

LEMAN RUSS DEMOLISHER! Always. I always take at least one. They have always made their points back. I find them especially useful at taking out SW blood claws, which I demolish with my fittingly named demolisher cannon, in every game against space wolves. Although the big pie plate is suited more for horde armies, I find it works wonders against foot MEQ as well. So we have horde armies, and MEQ covered, now the only threats are flyers and skimmers (eldar, mech armies) which can be taken out by other elements in my usual list such as lots of lascannons. Take a lascannon on the demolisher too. The demolisher has always been the MVP of my guard, even in competitive tournaments. Try it out, its great.

Both those tanks are better tank destroyers. Mabye not the demolished but defiantly the vanquisher. Punishers are the best anti horde tanks IMO. I like those and the battle tank. They never fail.

If in doubt, a Demolisher. It can kill heavy infantry and light vehicles with ease and it only costs 10% more than a LRBT.

100% on the Demolisher. You should have plenty of everything else in your army to deal with targets not suited for the Demolisher cannon.
My number 2 is an Exterminator with MMs and LC. Lots off good shots from a pair of those.
