A list off my Mod Manager with a brief explanation of the Mod:
Better Horses: This mod allows you to modify the stats of horses in game, giving them more stamina, higher run speeds, HP, even making them immortal if you want. It is modified via a spell.
Better Magic: This mod overhauls the magic skills in the game. It gives them scalable damage so they scale better into late game (in my experience this mod doesn't always work).
Craftable Crossbows and Bolts: Does what it says.
Crafting Complete: This mod overhauls the crafting system, adding in a number of items that aren't traditionally craftable in the base game (Foresworn gear). This mod is made of several mods that need each other to run. This mod also uses the mod Weapons and Armor Fixes. It adjusts some glitched item stats (like how the Orc Ax is treated as an Iron Ax by the game).
Fixed Followers Lite: Followers all now have high sneak skill so they won't give you away. Their level cap is maxed so they can scale up with the player.
Level Curve Rebalance: Changes the level curve of the game so that lower levels take longer but higher levels take less time than in the base game. Seeks to make leveling more regular across a characters playtime.
Rich Merchants: Gives all merchants in game 10000g. No more having stuff you can't sell bs.
ApachiiSkyHair: Adds some new hair styles to the game.
Genox Better Males: Overhauls the male texture models for faces and bodies and includes hair mods and eyes I think. Warning this comes in nude and non-nude variants.
Cover Eyes: This mod alters the eye textures in the game.
Male Idle Animation Replacer: This mod changes the idle standing animation. It has several variants. I use arms crossed.
Pretty Female Idle All in One Pack: Same as the above mod but for female models. This one is much more expansive with a lot of options. I think I use... 7?
The Eyes of Beauty: An overhaul of the eye textures and models in the game. I combine this mode with the Cover Eyes mod, loading Cover Eyes first.
UNP Replacer Configuration Package: A big config package for the UNP mod and a mountain of other female body mods all in one package that loads it up into the game for you. Includes the non-nude variants of UNP.
UNP Armor Replacer: Replaces the default armor models so that they adhere to the UNP body alterations.
Vampire Skin Color Fix: Fixes the effects on a character's face by being a vampire (some face mods actually fix this themselves, like the Genox face mods will fix it on male characters).
Young Bretons: This removes the wrinkles from Breton faces in game.
I have several armor mods and honestly don't remember what they all do. aMidianBorn Book of Silence I think contains a collection of light and heavy armors that put robes over various armors in the game. Or that might be Black Mage Armor. Cloaks of Skyrim adds equipable caps and cloaks to the game. Leather Armor ads Theives Guild armor to the game as a craftable item. Weapons of the Third Era MoS adds weapons from Morrowind to the game.
Quality World Map: Gives a world map similar to the one in Oblivion (has other options).
ClearWater: I use it to get rid of annoying water fog.
Enhanced Skyrim Night: Gives a much nicer night sky.
NPC's Protected: Protects all NPC's from being killed by anyone other than the player or quest events.
Revamped Exterior Fog: Overhauls fog.
Skyrim Flora Overhaul: Overhaul of the plants and plant textures in the game.
Skyrim HD - 2k Textures: I only use the landscape and misc overhauls. Lots of nicer textures for the game. I use Skyrim Flora Overhaul and Snow and Rocks Textures HD for other things.
SharpShooters ENB: This mod is awesome. It changes the way color is used in the game creating a more diverse and brilliant color palette in the game. Love it, but the Mod Manager won't install it properly. Instructions exist on youtube. I use this alongside Realistic Lighting Overhaul. Makes the game much prettier imo, but does add kind of a film grain effect.
Beans mods change the appearances of some characters (usually the marriageable ones). I use them for Aela, Borgakh, Brelyna, and Jordis.
Sky UI: Cause it has a better menu.
Werewolf Revert Form: Adds a spell to the Werewolf howls that ends Werewolf form when cast.
All these can be found on Skyrim Nexus. A lot of mods require SKSE as well.

Not as far as I know. I don't have the game on PC, but I watch Skyrim Mods Weekly. He's got great videos, of both cool mods and silly mods. TDA, you should check his vids out.

To be honest i don't see what i'm missing. Due to the fact my gripes with Skyrim rest on things to do with game mechanics, a little bit of fluff and animation i haven't seen anything that really appeals. The immersive armours/weapons packs look okay as they add more loot and variety to bandits and such i guess. 'SkyRE' looks okay but due to the fact it's been done by hobbyists and not pros it's fallen into the trap of being over-complicated, some of the base changes to the combat look like a step in the right direction though.

I don't use followers, the mod quests by and large, suck and even if i wanted guns in Skyrim the atrociously animated, and indeed implemented, guns are not what i'm after. Why you'd want sex in a computer game is beyond me.
The guy(s) that did Falskaar had the right idea in that nothing is over powered or non-canon but they've ended up with a fairly bland product. There's also a couple of Thalmor Quest mods that look ok i guess.
Give me:
Stealth roll in any direction, Whirlwind sprint in any direction, Sprint backwards or sideways for a 'Dodge'. Sprint Jump, Jumping power-attack (you could use the animation file from one of the sword exclusive kill-cams). Use dragon souls to slowly decrease shout cool-downs, Level up armour skills (slowly) by walking/running/sprinting in them. Armour pieces scale/levels up with the player in effectiveness the longer it is worn/more damage the player takes in it. Contextual prompts and animations for backstabs. Baseball slide like in Far cry 3/dishonored and Crysis etc. Locational damage for bows. Unarmed given a kick attack (bash) and a block/parry.

Meh, from what I've seen of it it looks a LOT better than Skyrim. I've got Skyrim on my PS3, and I'm already bored of it. It's so...dull.
One thing that Dragon Age has that Skyrim doesn't? Colour. Skyrim is just a monochrome brown, grey and very dull green mess. Even the magic effects are muted and washed out. It's like the Call of Duty of fantasy RPGs.
Dragon Age feels alive, with its own style. Skyrim is just so many arrows to the knee, terrible voice acting, poorly done animations and gravity-defying horses.

I've only installed a few so far:
The Unofficial Skyrim/Dawnguard/Hearthfire/Dragonborn Patch - fixes assorted bugs.
Timescales Modified - to make in-game days last 2.5 times longer.
50% Faster Cell Respawn - so that things don't take 2.5 times longer to respawn.
Fem Feet - because I stole someone's boots and noticed how weird the default feet look.
Female Mannequins - so that the Dragonborn's displayed armour looks like it would actually fit her.

Recently modded my game when I switched to PC.
The difference is absolutely amazing, both gameplay and graphical, even on a laptop.
I have something like 80 mods (72 to be precise), some big, some small.
The biggest ones I'm enjoying the most are:
Skyrim Redone
Frostfall
Realistic Needs and Diseases
Convenient Horses
Various graphical mods and fixes/unofficial patches
Falskaar
Total Carrying System Overhaul
A lot of immersion mods/gameplay mods for me, and the game is what I always wanted it to be.
Also, no fast travel for me. Feels like Morrowind again.

I'd also recommend Frostfall. I just started a new character on the hardest difficulty and it's surprisingly fun to cower in a ruin, hoping that troll will wander off before you freeze to death.

I use a massive amount of mods, so I wont be able to list them all from memory.
Colorful Magic
Crapton of armor mods inc. Knight of Thorns
A lot of magic mods
Improved followers(they dont trip traps you carefully avoided)
massive numbers of followers to help populate the world
A bunch of armory mods adding tons of weapons to the game.
Deathstar mod- replaces the moon with the Deathstar
Nikita's Succubus race, dark lillith armor, Lady Something or other(she is a Succubus in full demon mode)- One of my characters is a pure offense wizard with conjuration and I grabbed this one so he could have a demon follower that he "summoned" full time.
--The Succubus race mod is easily one of the best and most in depth race mods out there. Sex and boobs yes, but this mod is sooo much more than that and is definately worth picking up. My only complaint is she made new weapons that are really nice looking, but they are in seperate mods instead of all in one.

I've just started using the combination of Enhanced Lights & FX and Immersive Interiors, and it's a completely different experience.
ELFX reduces the amount of ambient light in favour of source light, which means you actually need a torch now. No more showboating in front of inexplicably blind bandits - now the shadows hide them just as effectively as they hide you.
Immersive Interiors is only limited to Whiterun at the moment, but it lets you see out the windows. It also means that the lighting changes during the day, which is a nice little feature for added immersion.
Edit: and if you use ELFX, I'd also recommend Illuminated Atronachs, because the deeper shadows draw attention to the fact that people made of fire should produce light.

The problem with skyrim mods is that the base game will still be incredibly boring. Combat will be broken, quests still boring and characters stay dumb.
You can change the combat mechanics with SkyRe or Requim. I used skyre because you only need to install 1 mod and not 15 (though skyre doesn't change dragons or vampires). Also requim is basically vanilla master but bots don't cheat. SkyRe is buggy (some perks and spells don't work properly)
I also used tropical skyrim because the vanilla look was just dull (like rest of the game). Beware that some collisions with new trees is effed up (you need to tcl sometimes, but I don't think npc pathing is bugged).
Also various boobie mods made the better. I'm being serious here.
Honestly if you are going to play skyrim just play dawnguard and dragonborn and then uninstall and play something better like new vegas or alpha protocol.

In my experiences a lot of this stuff (particularly some of the stuff you listed) is similar to the 'Create Your Own Rules' section for 40k on this site, i.e. it's a load of fans thinking they can do it better but actually having no clue, mostly because of personal bias. What is better game mechanics is in the eye of the beholder for one, guns have no place in the Elder Scrolls universe as it is, and oh lol adding sex to your game is cool /sarcasmoff
This last one especially, seriously, the fact that people spend time coding this into a game to get kicks rather than go out into the world for at least a chance at the real thing is shockingly pathetic. Or you know, just watch porn.
Based on a later comment it seems you made this comment without actually playing Dragon Age, yet it doesn't excuse the idiocy in it. Skyrim is an open ended free-flow RPG; Dragon Age is a semi-linear short action- RPG. Dragon Age will take you a few days, Skyrim will take you a few months. And as you can see from my avatar, I'm a huge Dragon Age fan, but they really is no comparison. A little education before making comments can go a long way.
