Is there any stories about Tau being stranded on a planet and sort of feral-izing their gear in order to survive? Or any tau or kroot warbands that are somewhat unevolved? I wanted to make an army like that, and fluff is a bit question for me. I'm thinking stuff like firewarriors, with grenade bandoliers and fur capes, missing armor plates, with carved rock bayonets hastily strapped on their pulse carbines, stuff like that.
Does anyone know of any pictures, ideas, or fluff about this?

I personally haven't heard of it before, but I like the idea alot. I think it would make for a really cool looking army, and it doesn't seem too far off. I don't think you have any issues with people accepting it either way.

The closest thing in fluff about the tau regressing would be the D'yanoi sept.
D'yanoi is a sept world that was once isolated from the Tau Empire for many years. Tau on this world regressed to a more basic level of technology. Inhabitants of this Sept are regarded as rustic and backwards. D'yanoi means "twin moons." D'yanoi is cast in perpetual half-light by the complex interaction of its moons with its tide-locked orbit. When the Tau first settled the world during the First Sphere of Expansion, D'yanoi was home to colossal reptilian beasts that had to be driven back by disciplined Cadres of Fire Warriors. The D'yanoi beasts consumed many colonists before this was accomplished

The closest thing in fiction is the novel "Fire Caste", although it's more Vietnam war than feral.
Also have a look at Commander Farsight (Tau without ethereals) and old Mont'au times.

I don't think commander farsight is a good argument for feral tau because they are still civilized just not a part of the tau empire anymore and no ethereals.

Imperial worlds tend to regress because they can be cut off from the rest of human space for millenia at a time due to Warp storms. The Tau empire is a lot more compact and doesn;t rely on full warp travel in the same way the Imperium does so at this point its unlikely that they would have such drastic changes in one of their colonies.

While not canon, there was a gentleman on Advanced Tau Tactica that posted some concept art for a "feral Farsight" enclave.
Here are a few tidbits

Again, not mine, but cool and possibly helpful for your project.

We recently had some fun thinking about Tau going dark. Why join the Greater Good when you can be part of the Greater Evil? Some Riptides with dark eldar corpses crucified upside down on the front and so on...

No reason it couldn't happen, I suppose. Assuming they were properly cut off for a long period of time and were only recently re-emerging.
As always, rule of cool. It sounds cool, and doesn't go against the fluff which is a bonus, so go for it.

Sounds like an interesting idea, where an Ethereal goes way rogue and converts a cadre into a destroy all for the "greaterer" good kinda thing.

Well, we were thinking along the lines of Commander Sa'tan going rogue in order to destroy all threats. Scorched earth, execute the survivors, destroy the enemy infrastructure. Basically making himself everything the Tau don't like in order to secure ultimate victory for the Empire. Except somewhere along the line he starts thinking of his way of warfare as the right way of doing it, dragging his troops into a ever deepening abyss of madness and slaughter.

Doesn't sound too farfetched and i don't think there is anything against it in fluff.

Would be really good opportunity for you to pick the army that did cut them off for so long. Make some dynamic basing with kroot lashing into that enemy or fire warriors utilizing some of their gear (due to the time of the combat has ensued).
That is if you choose for them to have been blockaded for centuries by an enemy.
