I feel like while I'm not a pro painter, my models are well painted and always look much better in real life than when I try to take pictures of them.

Has anyone got tips to take pics? Would a regular camera be better? How about background? I like my display board but should I just go for a plain background? Black or white?

The quickest and easiest way to take good photos with minimal equipment :

Get a cardboard box, like a semi large Amazon box. Get a piece of paper with a gradient background printed on it, and place it in the box from the back to the bottom in a curve.

Get the light you use for painting and shine it into the box. Then get a second light (the one on your phone will do) and point it along the line of the shadows to light things evenly.

Use a camera with a macro mode (not a phone camera). Turn off the flash, place it on the flat surface or tripod to stop ti shaking, then you are done

Not sure what camera you use. A mobile phone is not enough for sure.

I just got two blank pieces of paper, taped them together, and then angled it against a solid support. It bends smoothly with no shadow showing.

Just place your models on it, then make sure you have strong light coming from several directions - this is to eliminate shadows and highlight the detail.

Your pics aren't bad overall. One of your biggest issues is focus. Getting a tripod is going to help - but as you're shooting with a cell phone... that's going to be harder to get working (I actually built a tripod rig for one of my cellphones when I was using it for video). So just making sure your camera is set on something stable will help a lot.

Normally I don't suggest buying better equipment but if you're really concerned about your photos you might consider actually buying a camera. Cell phones are about camera convenience - not quality.
