I've played a few games as Imperials and I really love the base level Tie Interceptors. I feel they are worth the price increase over a regular Tie. I run a pack of three and keep them together. If I had enough I would probably just run interceptors and maybe mauler mithal and vader.

I've found a lot of mixed results with my interceptors. While they seem great on paper, I find that unless I have a bigger bullet sponge (i.e. Slave I or Advanced/w missiles), my opponents simply focus fire these bad boys down before I can use their excellent base attack. Maybe it's the low amount I have available, but every time I run them, it seems my other fighters pull most of the weight. While I may do some decent damage against a single fighter with one of my interceptors per game, they certainly haven't proven themselves to me yet. While their stats on paper seems pretty good to me, I find they die way to fast for what you get. Now maybe I'm just stupid, since a lot of other people love to run these guys, but my opinion is that they pose too much of a threat to the rebel player for them to not focus them down. I'll still run them in my fleets, but I generally plan on these guys soaking turn 1 or turn 2 shots and just rely on my TIE horde and cluster missiles to do the rest.

You pretty much hit the nail on the head, the Interceptors ARE great in their own right above the Fighters, however if you're only running one then it'll be focused on. Fel with PTL seems the best way to keep a single Int alive, as just using them as flanking predators relies on the rebels not just focusing on them till its dead. 3 hull means it can and just may go down in one attack volley.

However I think they come more into their own if you either run them with something bigger and nastier (firespray) or as a straight upgrade over fighters and use them as a "heroic" imperial list. That way no single Int get's focused on.

We've been playing 150 points lists and I'll bring 3 base tie interceptors, 2 academy pilots (regular ties) mauler Mithal and vader with swarm tactics and maybe an extra shield and the list is quite nice. Vader can't be ignored with his 2 abilities each turn and utilizing swarm tactics to make an academy pilot shoot at PS 9. The interceptors stick together. One might die, but the survivors can wreck a ship easily. I have been having good luck with evading with the interceptors 3 defense dice. It's still important to have at least one advanced onthe table (vader) I just picked up two more today and got lucky at the FLGS as I was there as the new shipment hit today. I got 2 Bwings and one Tie Bomber. Didn't go for the moldy crow as I am not convinced of its combat prowess yet, I wanna read some reports on it first.
