You charge grey knights who have psycannons. Which weapons profile do you use for overwatch?

Yes.
You have two profiles. You can choose (unless there is a special rule that says you must use a specific profile).

Greebo had spent an irritating two minutes in that box. Technically, a cat locked in a box may be alive or it may be dead. You never know until you look. This is incredibly misleading for the OP, as the vast majority of units carrying Psycannons are not Relentless.
As for the OP, you use whichever profile you wish, but given that you hits on 6's anyway, the choice is obvious.

I agree that was misleading for the ops sake.
Firing a not blast heavy profile weapon with a none relentless unit that has moved means you fire snap shots, during overwatch you fire snap shots, so fire the maximum number of shots you can regardless.

as above, snap shots with heavy, moved or not, is 100% legal,
so 4 shots every time, is the smart choice.
you can also make 4 snap shots at flyers each time FYI
