I've reached a crossroads...
The book is either out in November (yay) or January (boo).
I've got stuff sitting on their sprues waiting to be out together, but without knowing what is going to be good, I'm very reluctant to put stuff together.
Should I stick with them and just build stuff or should I wait and not get a game in until they are released and put everything together then?

You could build them without any options, magnetise them and then paint everything, so no matter what happens, you have your bases covered.

Never magnetised anything before.
It's only the big beasts I'm bothered about.
Only got a Hive Tyrant, 20 Termagants and 20 Hormagaunts so far. Too scared to buy anymore incase it becomes rubbish in game.

Magnetizing your monstrous creatures is definitely worthwhile. It's pretty easy, and there are a ton of guides on how to do it.
I wouldn't bother magnetizing gaunts though. It takes too long when there are that many models, both to actually get the magnets in there, and to attach all the arms before a game.
Fleshborers are the standard termagant weapon, and are likely to remain a safe choice with the new codex.
The hormagaunts don't really have any options, so you shouldn't have any problems putting those together (no one cares whether you attach the toxin sacs/adrenal glands or not).

Even if you don't want to magnetise (which you really should, it's easy and saves you heaps of money in the long run), you could just assemble your Tyrant up to the point before gluing the arms and play with it like that.

Magnetize Magnetize Magnetize
For big monsters and warriors its almost essential to magnetize the main weapon arms. It protects you against any future codex change as various weapons change in both power and also availability. It will protect you for this codex and for the next codex.
Don't worry too much about the bio enhancements, like most upgrades its not really essential to stick to WYSIWYG with them; mostly just the body and the main weapon(s) are all that most players need in a match to be correct.
Nids get a lot of weapon options and a fair few changes so a new codex can change quite a bit and you'll hear many a story of players who put together models without magnets who then had to either hack them up or buy new replacements (twin heavy weapon carnifex's were popular a codex or two ago, but in the current edition are not allowed - that's costly if you' had two or three).

The only things that will become rubbish will be hive guard (skyfire, so they can't hit ground well) and tervgions (carnifex treatment) as well as mawloc/trygons. Everything else will be fine and work very well. Currently the best thing in the book are the damn raveners, not that most people know how to play nids.

a) Considering Hive Guard are getting a new kit, rendering them obsolete is a terrible marketing strategy
b) Tervigons will probably be reduced in power, but considering the kit is relatively new and that playing them forces you to buy more Termagants, I don't see them getting the Carnifex treatment
c) Trygons could be nerfed and Mawlocs buffed, forcing everyone who assembled Trygons to buy a second kit to make a Mawloc
d) What are you talking about? Raveners are fragile and overcosted, it's Tervigons that have kept the codex competitive.

Raveners are fragile and overcosted, but they are a counter charge or combined charge unit that can do a lot of damage. 5 attacks on a charge is nothing to sneeze at.

Yes, they're good in combat, all the combat stats in the world mean nothing at all if you can't get into combat in the first place.

Well, I've decided to limit myself to 750 points under the current codex and save up for when the new Dex is out.
Just got a basic list ATM.
Flying Tyrant.
2x10 Termagants.
2x Tervigons.
Can't really go wrong with that for 750.

This seems to be a very solid small points list for the short while until the new codex breaks. The Tervigons can easily handle any concerns about not having enough scoring models on the table, and the Flyrant provides anti-air and anti-tank quite well thanks to the number of twin linked S6 shots he can spew out in any location he pleases.

That is exactly what I was thinking.
I probably won't see AV14, so I'm good for Anti Tank and there's plenty of opportunities to make more grunts.
