Sadly there is a huge points imbalance between EW and LW. It really can't be balanced in my experience. Might be worth seeing how much of his stuff e.g infantry/artillery could be used in EW

It sadly just can't be done easily in my eyes. The period system was implemented because they wanted to keep the game simple, but over the course of WW2 a lot of things changed. They added periods so they would only have to worry about balancing inside their own period.

On top of that, there would be some lists that are impossible to win against. Like, a German King Tiger list fighting an early-war armored list where armor values are pretty much non-existent. It'd be a slaughter.

AND, the massive imbalance points wise is too huge to ignore. A Tiger in Mid-War costs a lot more points than a Tiger in late-war, despite being the same exact tank.

I would probably keep using the German infantry, which would probably be the easiest to work in, and think pick up some cheap German armour to complement it. I know Zvezda do some plastic Panzer III, they might be an option?

The alternative could be to use the Stugs you get with the starter set as 'Stug A's', which are early war (as below)

Welcome!

That's probably a good call. Using lists all from the same period, even better same book, and thus a much more balanced (I like FoW since everything is fairly well balanced against everything in the same period and there is no real uber and cheesy lists) game which will probably be more enjoyable for both players
