I can clear up the bit about the riptide's shooting...
The weapon is a heavy burst cannon. The nova-charge profile for this weapon does indeed have 12 shots, with rending and gets hot (Tau Empire, page 65)
The wargear used was the "Earth Cast Array" (Enclaves page 51). This is a Farsight enclave Signature system (enclave Riptides can take signatures, Enclaves page 50). Not only does this allow all 1's to be rerolled in shooting, but it also allows the nova charge to be rerolled. The penalty is having your WS reduced to 1, meaning that this particular riptide would be awful in CC. It's a pricy upgrade, but well worth it for a burst cannon equipped riptide.
Interceptor is provided by "Early Warning Override" (Tau Empire, page 68). It's a REALLY cheap upgrade, so it's easy to spam.
As to the points cost of the list, if he didn't have interceptor on one suit team, it'd be pretty close to 1000. Your tournament organizer should have had the list, so I'm guessing it was all spelled out there.

It would be reasonable to deck out the burst tide with it, especially if he was running earth cast array and with a velocity tracker. That build makes one hell of an anti-aircraft unit (guessing your partner's helldrake found out the hard way).
I could see running the broadsides with it too. Not sure I'd use it on the suits, especially not the fusion suits. That sounds like a deepstrike unit if he coupled it with Farsight.
Also, if you look at his list, it has a very major flaw of having 2 very small troop choices. 6 suits in total should be easy enough to mulch, since they're just marines with an extra wound. I would have targeted them first with everything you had. Now you may be thinking "wait, suits are elites". Well, Enclaves lets him take them as troops (enclaves, Pg 50).
As to dual gun vs twin-linked, yes, that's a build you can do if you're willing to pay the points. That's probably why he had so few units. Math-hammer wise, dual weapons are slightly better than twin-linked, with a much higher damage potential, but you are literally buying the weapon twice. Tau suits can all shoot up to two weapons per turn (multi-trackers are built in now, Tau Empire Pg 70), so my guess is he was banking on taking his targets down with pure number of dice. That would also explain the missile spam on the broadsides.
The Gundam model? That's just funny, but yeah, it's weapon set does kinda look like a Riptide. I'm amused he took the joke literally, so while I may not like the idea of a proxy model, full point for creativity! As long as he had it on the correct sized base, I wouldn't worry too much about it.
Sounds like he got inside your head a bit, and threw you off your game. While I don't condone such activity, I cannot condemn it either. Psychological warfare is a legit part of any table top game, and this guy sounds like he knew how to use it.

He was probably using the 1/144 scale model, which is just under 5" tall. Seen it before, and you can see a side by side comparison here...

There is actually a whole thread about converting one here...

Where do you guys think the "Shas'vre Gundam" jokes come from? The guy that Nettik is playing against is just playing the trope straight up.

@Mecnanium: he didnt get in my head my army was just straight move and try to lock units in assault and hold objectives. And me and my partner actually would have won the game but there was a rule the LGS said "if you dont complete your game it ends in a draw. meaning unless you table them or end the game in turns in 2 hour if you are still playing no matter who is winning it becomes a draw. Also convertions have to be at least 50% gw models if i am not mistaken. And the flying chicken actually was not even damaged until the last turn Edit: i looked at the links for the gundams you put in and it wasnt any of those in comparison. i put a link in what gundam it actually was.(i owned it at one time)

You said it was a Gundam Heavyarms. I own 3 in the 1/144 scale, and sorry Nettik, they're roughly the same size at the top two pictured in the links I provided (Wing Zero, and Serpent Custom, both of which are from the same series). It sounds like your opponent picked a model that I'd say was within 90-95% of the correct high and bulk. I'm assuming he had it on a base (probably a scratch built one), and that the base was about the right size too.
Part of the reason the Riptide kit *looks* bigger is because so many people model it in epic leaping poses. There is nothing, however, that says you have to do that (I can think of huge LOS rules that would encourage you NOT to model it this way...) and I have seen several poses where the suit is crouched down as low as possible.
Was it painted to look like the rest of his army?
Could you clearly tell what it was armed with (and did he have the bits for the different guns)?
If the answer to both those questions is "yes", then you should commend your opponent for finding a $10 kit that could stand in for a $80 kit with reasonable accuracy. I have seen some obviously non-GW models that stood in perfectly. In fact, GW used to encourage this back in the earlier editions (seriously, look up "deodorant grav tank"). Can't help that the people who write your game of choice became greedy bastards, and that some people will find a work-around.
