The Tau make use of Bionics and Cybernetics, but there doesn't seem to be many official examples of what they are like. All i know of are two pieces of art of Tau with a bionic eye. Has anyone got any ideas for how to do Tau bionics/cybernetics?

Something simplistic, like modern day prosthetics, but chunkier/blockier. Toss up a search "cybernetic limb", or "Bionic arm" (though those both sound quite techy) and see what you get.

Easy. I would simply use Necron arms and legs for this. You'd need to do a tiny bit of GS work to make the hooves, but that's it.

They're a tiny bit bigger, but it's not hard at all to cut the parts down to size. I recommend using the plain old warriors for this, as they're the smallest and plainest of the lot. The lack of sculpted details on the limbs makes them easy to chop down to size for Tau. If you need a good hand, use a Space Marine hand, possibly from the GK range since they have lots of hand poses, or just a random tactical hand, and shave off one of the fingers. Or I guess you could go crazy and try to sculpt a pinchy-claw kind of thing, but that's too much effort.

For bionic eyes, you might just cut off part of a Space Marine's bolter scope, if you have one laying around.. These are all cheap bits I'm describing anyway, if you want to just buy some off HOB or a similar seller.

Oh, FYI, necron bits in general are very compatible with Tau for conversions. I have one of the Lychguard boxes that I won in a raffle a while back, and I've used the bits for so many conversions on my tau that it's just silly.
