I see lots of customized figures, both modified and from scratch. So, what does one use for them? They dont look like standard citadel pieces modified to fit the purpose they need to, so what are they?

There are lots of 3rd party parts for modifying GW or other figures, and of course rival company figures.
Some people sculpt their own figures using putty and so on.

For Xenomorphs I would look for some Horroclix Aliens on eBay or from garage sales. You don't even need to convert them, just put them on new bases.
Alternatively, Genestealer models could be converted. Chop off the second set of arms and maybe replace the head with one of the Ymgarl variant heads, or just use putty to remodel it a bit.
I would advise using Space Hulk Genestealers, except the game is still so highly regarded that any edition is fairly expensive and it's probably best to keep it ias a set.
However I expect people sell off standard Genestealer models on eBay.

For Necromorphs i always though that putting Hormugant claws on these guys, bloodying them and maybe making them a bit mutilated would have a good effect.

Hmm.. a bit unreleated, but how would you make a partially "Buried" figure? In this case, Rippers jumping out of a pile of sand (Or dirt, or basically anything).

You can use wall filler, clay or some sort of silicone to create the mound. stick some heads into the still soft mass and let it harden. Should work quite good.

A lump of clay with some Texture paint over it was my initial idea, but would that get to heavy?

Zerglings can be easily whomped up from the Gaunt sprue while Hydralisks look pretty easy with a combo of Warrior and Ravener parts. Other strains would require a bit more work perhaps and some careful checking of available parts.
Fundamentally, though, when making conversions, you start out by trying to find a bunch of existing part that fits the image you have in your head and see if you can fit them all together. If you can't find a part you're totally happy with then you need to make it yourself, either from bits of plastic or sculpting it out of a suitable material. Too heavy for what? It is common to add stones lead and coins to model bases either for aesthetic purposes, or to help stabilise a top-heavy model, so a lump of clay isn't going to be much of a problem.

Also, you shouldn't mould a giant anthill of clay, just say 1-1,5 cm at the top maybe on the large 40mm bases.

not sure if I am to late but walmart sells crap clay that drys in 3 days hard as hell. Good for basing if you need alot of it for cheap. I got a tub of I think 3 pounds for 5$
