Are those long dagger looking things tails? Like, can they bend?

Those are tails, they would have some flexibility, but they are meant purely for balance.

Alright, thanks. Now, because I need to over analyze everything, I assume it is made of some kind of cartilage or cartilage like material?

It's made of biomass, raw and delicious Tyranid schmutz

But really, it would probably be structured and composed very similarly to the tail of a Raptor or some other predatory, pack hunting dinosaur.

Would make sense, as they do mostly resemble Insectoid super raptors with guns.
