In the codex it says that stealth suit wearers are seen as eccentric and odd. If you are wearing a stealth suit, can you advance beyond Shas,vre?

AFAIK, yes. They just don't keep their stealth suits, with the notable exception of shadowsun.

IIRC Shadowtsun was rolling around in a Crisis suit at the beginning of her commander career.

This is the line that gets me, they are unpredictable and regarded suspiciously.

But are all stealthsuit pilots volunteers? Could an otherwise normal Shas'ui just be assigned to a stealthsuit squad?

As far as I'm aware just about all tau forces are volunteers.

Even in units with high death ratio's like Pathfinders the number of volunteers far outstrips the ability to train/ outfit them.

I'd imagine despite the suspicions there is no shortage of volunteers for stealth suit duty.

Well if you are born in the fire caste you are automatically in the tau forces, but where you go it largely up to you and your rank. A shas'la can go into, vehicles, fire-teams, pathfinders, ect. A shas'ui\shas'vre could be even more vehicles, crisis, broadside or stealth teams. There are some exception, like farsight originally being assigned to a broadside team to allow him to develop self control.
