A friend of mine gave me a dozen or so Grey Knights, each of them has what looks like a pretty sweet ass Bolter and a Polearm of sorts. I wanna convert them into my DA and am looking for similar units I could say that they are based on what they are holding. Oh I should mention that the models are metal and I haven't got extra bits to change parts around yet. I'm looking online now but I figured I would come here to see what you guys knew.

To make them regular DA tacticals you'd pretty much have to cut both arms off and replace them a pair holding a standard bolter. On top of that the heads will be different, and the markings on the armor are a little off for DA but you can just put green stuff over that and paint them.

The metal GKs have a force halberd and storm bolter, and I don't think there is anything particularly close to that in the DA codex, GKs are a bit of a weird conversion back into regular SMs.

Do DA have a veteran unit of some sorts or command squad? GK make good veterans with their unique armor and gear

Yeah thats what I noticed lol. For now ima make them into a Command Squad with a Power Sword and a Storm Bolter. It may not be exact, but until I get extra pieces its what I got

Yeah they have a Command Squad, it looks like it'll work, decals will be a pain but it's okay.

I'd probably strip them for parts. The legs and torsos transfer to terminators well. The halberds can be used in company masters and librarians. The wrist storm bolters are good anywhere, as are the heads.

DA army: 3500pts,
admech army: 600pts

Keep them as grey knight allies for your dark angels. You may need the daemon slaying help in 7th lol

Standard PAGK could make a pricy command squad; I'd advise waiting on 7e's Allies table but as it stands GK allies aren't a bad idea.
