Apocalypse Now really is an unbelievable flick. I mean, how many movies can you walk out of saying, "I never thought they'd make a pro-war movie based on the proposition that humanity sucks"? One. Exactly one: Apocalypse Now.
Or as I often refer to it, Apocalypse Meow.

Star Wars?
Of the originals listed I liked blackhawk down best.
Breaker Morant... haven't seen it for years but a tremendously powerful war movie- set in the Boer War.
The beach attack in Apocalypse now though is one of the best sets ever.

I'm going to have to ask you to back up your opinion with more than just you don't like the scene with the "handsome German" stabbing Adam Goldberg.
Personally, I really like Braveheart.
Also films like Saving Private Ryan, Black Hawk Down, Kelly's Heroes, and mini-series' like Band of Brothers are all excellent.
I also really enjoy Das Boot and Stalingrad. I haven't seen Cross of Iron but it looks interesting.
And Hellfury, thanks for posting that Liberation movie. I don't speak a lick of Russian but it looks like it would be pretty cool, if nothing else just to see all the vehicles.
Personally I don't really care for Enemy at the Gates. Some of the battle scenes are really good, but I swear, the British accents make me cringe. I never understood why they didn't just use Russian accents.

If a war movie is anything with war in it, you include almost every action movie made. To me, a war movie is a movie that is primarly about a war, generally a specific operation or campaign. It can look at the campaign in a technical sense or in a political sense, but its fundamentally about that fight. A Bridge to Far is all about showing the audience the events of Operation Market Garden, it stands or falls on it's accuracy and it's ability to communicate the events of the battle to the audience. Saving Private Ryan is all about what American soldiers went through in WWII. Platoon is a political comment on the Vietnam war.
The Thin Red Line is probably my favourite movie period, but given the amount of time spent on landscapes and the spiritual thoughts of the soldiers, I'm not really sure it's much of a war movie.
Enemy at the Gates is a really enjoyable movie, and it tells a pretty good human story, and the final scenes manage to capture the ugliness of the Eastern front pretty well. But the events and details of the film had nothing to do with in terms it has nothing to do with Stalingrad, a wide range of facts are simply wrong (eg soldiers being sent into battle without rifles - this occurred in the Russian army in WWI, never at Stalingrad). Compare it to Stalingrad, which makes a real effort to show you the living conditions of the soldiers and their eventual fates. Enemy at the Gates might be the better movie, but it isn't the better war movie.
It gets complicated when you start looking films like Kelly's Heroes, which is great action movie that just happened to be set in WWII. There was nothing glaringly wrong, but it wasn't really about the war itself.
Anyhow, the movie I think does the best job of being a war movie is Das Boot. I found it captured the lives of the soldiers in more real and more evocative way than any other movie I've seen.

Yes. That scene is merely the tip of the iceberg.
Keep in mind that the Soviet Union had possession of east germany and all of the spoils that the defeated country had to offer. So they had free and massive access to that arsenal.
Also it is rumoured that since the movie was made only 2 decades after the war was over, that some of those piloting the tanks and planes were vets.
