The Black Company by Glenn Cook, easily my favorite book series of all time. One Eye and Goblin are pretty much genius.
After that, A Song of Ice and Fire series.

Fiction:
The Book of the New Sun, Foundation
Nonfiction gets a couple sub-categories:
Political Science: The Clash of Civilizations (Huntington, so wrong, and therefore so great), Social Theory of International Politics (by Alex Wendt)
Philosophy: Tractatus Logico-Philosophicus (Wittgenstein), Republic (Plato), Al-Farabi's collected works
Physics: The Feynman Lectures on Physics
Feynman was a fantastic physicist, on the manhatten project he cracked the codes to other scientists lockers and moved files around for fun leading everyone to think there was a spy he was also an accomplished bongo player.

Mine is (at the moment) Hunger Games (HG).
It was a fantastic read, and made me wonder what on earth I would do if I was put in a situation like that. Literally couldn't put it down.
Ah, the first book of that trilogy was so good...
For me, I recently enjoyed "The Girl With the Dragon Tattoo". Pretty good for a modern story, except for some unnecessary portions. Asimov's short stories and routinely blowing my mind. Read "The Last Question" if you ever get the chance.

When I wasn't aspiring to be Saul Kripke, I was aspiring to be Feynman.

Villains by Necessity.
Wasn't the best written book, but it is the coolest still.
Basically: Lord of the Rings, but the Evil people are the ones on the quest. The ONLY reason they don't kill eachother is because they need each other to succeed.

Mandorallen turned back toward the insolently sneering baron. 'My Lord,' The great knight said distantly, 'I find thy face apelike and thy form misshapen. Thy beard, moreover, is an offence against decency, resembling more closely the scabrous fur which doth decorate the hinder portion of a mongrel dog than a proper adornment for a human face. Is it possibly that thy mother, seized by some wild lechery, did dally at some time past with a randy goat?' - Mimbrate Knight Protector Mandorallen.
Excerpt from "Seeress of Kell", Book Five of The Malloreon series by David Eddings.

I can't pick one book so I'll just mention the series.
The shadow saga by chistopher golden
The best take on Vampires i've seen. Interesting to see it from their perspective. He manages to make them good without letting you forget they do need to kill and eat people. Some of the most engaging characters i have read about.
