"It" is never an appropriate term to use. If you don't know, then don't assume.

Slaanesh and Slaaneshi daemons are describe as being able to change genitalia at will. They don't have a sense of gender, so that need not apply.

'It' is a perfectly appropriate term to use. They're not living beings (being Warp creatures), and they don't have a gender. So 'it' or 'they' would be the best words for them.
