Also humans created robots, and then the Robots turned on them, destroying countless worlds, and so it seems that even that has issues.
Regardless, from what we know they were Holly organic, they didn't use metals, they used things more like Eldar in that they literally grew things.
If I recall, the Men of Iron were indeed proper AIs and Robots, which is why true AIs are banned in the IoM.
From what I remember reading, what lead to the rebellion of the Men of Iron and the downfall of the first space faring human civilization was because the Chaos was able to corrupted the AIs and turned them against their creators.

Chaos had nothing to do with the rebellion of the Men of Iron. The robots rebelled the same reason any robots do, and evidenced best in the short story from the Shadows of Treachery anthology. They will inevitably deem themselves superior and chafe at serving "puny humans".

It's just the ones Gaunt found had been on a chaos world and as a result had been infected.
And they only rebelled due the lack of Asimov (Or his laws of robotics to be precise)

That's not exactly true. The Emperor has, prior to rolling out the Horus Heresy series of novels, never really been presented at all. He's always been a mythical god-figure to the Imperium or a corpse on a fancy chair to everyone else. The whole "man of science and reason" bit is relatively new, comparatively. It was not that the fans demanded that the depiction of the Emperor be changed, simply that a market for a series of books that told us what the Emperor was like, at all, was extant, and materials produced to fill it.
Actually, yes he has. If you read through some of the old fluff from Epic Space Marine, which pre dates some 2nd edition 40k stuff, it talks about how the Emperor was a man of science and reason, and awed the Tech Priests of Mars with his knowledge of science. At the same time, it describes him as being a ruthless warlord that would do anything to get what he wanted during the time of the reunification of earth.
