This is sort of a mix between fluff and rules. Say you have an army of alpha legion, black legion, night lords, word barers, or iron warriors. Since they all worship undivided, could you give your units different marks or do players frown on that?
Or what if i really like the model of a sorceror but want him to have stats as a Chaos Lord, is that fine or not? Not sure if people are picky like that

Maybe Chaos Daemons are so angry all the time because despite their near infinite intelligence they can't seem to forge anything more complex than a sword, an axe, or a staff |

Some people will frown on it for some reason or other but there's no real reason to not have different marks.
This is something some people might not allow. Personally I'd say as long as you say "This is a Chaos Lord not a Chaos Sorceror" its fine.

Well there's different interpretations. For example, the Iron Warriors have "Iron Berserkers," who are like Khorne Berserkers without the worship of Khorne. Black Legion have the Bringers of Decay, a Nurgle worshipping, non-Plague Marine group. Black Legion is also very diverse as so could have different worships within it but is officially Undivided. Night Lords could be any number of reasons. Some marines have been fighting so much that they are frenzied, or super skilled and so gain similar effects to mark of Khorne or Slaanesh. Or could be extra tough. Or have particular favour of the Dark Gods in general and get +1 Invulnerable save. And really you could apply it to any legion

I just think it's silly if i used word bearers and had half the army use marks of Nurgle and my opponent says you can't do that. "Fine, these aren't word bearers, they're my home brew chapter named Name Holders."
I know my friend painted his army like emperors children but he says they have Mark of Khorne and justifies this by saying that slaanesh bestowed on them blessed combat drugs that increase their skill or whatever. And that's fine by me. Now if you had a Carnifex but said it's a Chaos sorceror then sorry but no

if your CSM army is undivided then i reckon individual units can have the mark of the single god. i reckon that fluffily we can easily imagine groups of CSM in an undivided army falling to one god or another depending on their taste. certainly this happens in the novels.
finally, use a sorcerer as a lord, no worries. as long as it looks on the table close enough to what your army list says it is, then awesome.

Word Bearers absolutely reject devotion to one god and usually do not have cult units.
Black Legion have cults for all the gods, with the probable exception of Thousand Son automata.
Iron Hands will have Khorne berzerkers, and had access to them in Chapter Approved.
Night Lords do not worship any type of chaos, but many of them may enter "raptor cults."

Commander of the Mysterious 2nd Legion

the Legions are thousands if not millions strong bodies, many with minimal if any central unifying structure. they have been in the eye of terror of 10 thousand years.
Anyone who says that there aren't people with marks of gods in any of the listed bodies you listed is proably fooling themselves.
