If you have varnished them, then just run them under some water and dry them off.
If not you can always use canned air.

Put something like a loose weave shirt over the nozzle of a hoover and suck the dust off. Then you are getting rid of it not just blowing it back into the room.

I use a cheap chip brush, generally. Not nearly abrasive enough to mar cured paint (let alone varnish), but a hell of a lot better than air at shifting dust that's not only settled, but been "set" by humidity.

If you go to the makeup section of Target or Wal Mart you can find Blush Brushes. These work really well as a giant feather duster for models.

I think the varnish is the best way to go. This is helpful in many ways as it will allow your table top models to have a longer life without dealing with typical wearing off of the paint.
Some caned air or just use the compressor from your airbrush to undust the models would be a good idea also. Again, having varnish on your models allows you to clean them a little bit more "vigorously".
I store all of my models in totes and put them in my closet with the door closed. I have a HUGE amount of dust where I live and it is a constant issue. During my painting projects I use a small kitchen towel or an empty pillow case to cover the models while I am not working.
Dust is a constant problem for me. I feel your pain! Good luck!
