I dont have the Inq online dex but I heard that you can take them without them occupying the ally slot, so if thats possible then you can take an Assassin too, right?
I'd like to remain unfazed by the removal of all these units from the GK dex and would like to legally play my old list (with minor adjustments where needed) but without having to go unbound.
If it is possible, can I also use the Nemesis Strike Force detachment for my GKs?

? In 7th there is no "ally slot". You can have as many detachments, which include formations, as you have points for.
So "yes" would be the answer.

Hmm I thought the unlimited amounts of detachments was limited to combined arms detachments (1 HQ + 2 troops to unlock another one) only. Looks like I confused a lot of stuff.

Pretty sure the answer is yes.
Inquisitorial forces have their own detachment, so they're not an allied detachment in that sense. IIRC it's 1 HQ 1 Elite minimum and up to 2 HQ 4 Elites.
Assassins are similar in that they use their own detachment. You'll need one Officio Assassinorum detachment per assassin you field, but that doesn't make you unbound, just multi-detachment.
So yeah, you should be able to play 6th ed GK in 7th, you'll just need to download/buy the inquisition codex and the assassins dataslate!

Yeah, as nosferatu1001 said you can take any amount of detachments, the only reason why you couldn't would be if your gaming group limits the number of detachments that you can take.
