I was wondering and do they? Has there been anything like this in any fluff or anything?
Also, can you guys think of any reasons why Orks would want prisoners?

They do. Primarily those who don't fight. They are enslaved to help produce more weapons and vehicles. Or collect raw resources.

Wasn't there some fluff about how Commissar Yarrick learned Orkish when he was captured by them? Or was it the other way around?
As for reasons.... slave labor? Entertainment? Perhaps both at the same time?

Ork slavers go way back in the fluff. Assumedly the Orks would want slaves to run all the infrastructure they can't. I mean, there has to be fuel and ammunition being build somewhere, and it's either slaves... or you have to trust Grots to do it, lol.

Marneus Calgar is referred to as "one of the Imperium's greatest tacticians" and he treats the Codex like it's the War Bible. If the Codex is garbage, then how bad is everyone else?

Orks capture civilian populations who don't want to fight, or fights who survive the conflict and surrender.

They then work the survivors literally to death, often eating them at some point.

IIRC, it's stated that a few runt herders actually herd humans around instead of grots (IE, slavery). Pretty sure the humans don't last forever though, obviously.
