I've been looking for suitable (scale) AT-ST's to play as armoured sentinals but have had no luck. Does such a thing exist and can anyone point me in that direction?

Look for the General Weiss expansion for Star Wars Rebel Asault from Fantasy Flight games.
There's a regular AT-ST in the full game but the expansion will be much cheaper if you're only after the walker.

This ought to do it...

You might also want to consider the AT-RT. It somewhat resembles the Rogue Trader era Sentinel. You could remove the stormtrooper figure and replace it with an imperial guard figure.

Under the couch

The WotC AT-ST is much, much too large to be a sentinel proxy.

There is an AT-Rt in the range, which would work if you can find it, but obviously doesn't satisfy the 'armoured' part.

Something like this would be closer to the right size.

There's a new "game" that I saw in a local toy shop that uses single posed figures - "Star wars Rebel command" that might have a sentinel sized ATST model.

I'm OVER 50 (and so far over everyone's BS, too).
Old enough to know better, young enough to not give a ****.

Sadly not, all the vehicles are in a different scale to the Infantry, and even between vehicles the sizing varies a lot. The infantry scale well with each other, and the fighters are roughly in scale, but the vehicles are generally no taller than the infantry. Here's a 40k scale shot, the AT-ST is about the same size as the Imperial on the left:
