I am joining a escalation league and also doing a campaign where the first round is 500 points per side. How does this look ?
One Overlord with resurrection orb and a royal court of
one harbinger of destruction
one harbinger of the storm fully loaded
one squad of five immortals
one squad of three wraiths
one annihilation barge

Res Orb is practically useless in low points, so drop that.
Also your list is illegal, you need 1 more troops choice. So I'd suggest dropping the crypteks, res orb and immortals and take 2 small squads of warriors. Also if you decide not to take crypteks then take a destroyer lord to join up with the wraiths.

Becauuuuse the Necron FOC says a minimum of 2 troop choices is required, he only has one troop choice. I don't know if it's the norm, but the escalation games I've played in store require the minimum standards to be met (as bound armies were a must) even at low points.

So your store has an extra opinion outside of the rules, that does not make his list illegal, just illegal to play at your store. Is he playing at your store and I missed that?
The FOC is simply a CAD now, he could field whatever he wants technically, and it would only cost him command benefits.
Field the new Monolith formation:
1 monolith
2 warrior units of 5
2 immortal units of 5
500 points even. Totally legal and has nothing to do with a force org chart.

Probably not considering it also heals immortals and warriors.
