So, I just picked up a Blood Angels Baal Predator from my local gaming store. I have decided to go with the TL Assault Cannon as the main armament, but I do not like the short, stubby barrels. Are there any ways I can convert the Baal Predator to give it long barrels?

there are two regular assault cannons in the ravenwing accessory pack - not sure how much longer they are than the baal ones (I dont own one) but they look a bit longer...?

I don't know about the scale of other assault cannons because it seems gw can't decide what size the damn thing is. It varies so severely between what it's on that your best bet is either just do as I suggested or scratch build a longer one or replace the entire cannon completely with a set that's your desired length.
