It's funny that almost all my favorite models are Fantasy. My all time fave is Treeman Ancient (specifically, the Durthu variant).
Close runners up:
- The dragons, including Sisters of Twilight on Forest Dragon, High Elf Prince on Dragon, and of course Malekith
- Nagash and Morghasts
- Necrosphinx
In the 40k world, my faves are:
- Big stompy Tyranid models like Carnifex, Hive Tyrant
- Pretty much the entire Dark Eldar collection. Raiders are an amazing basic DT model.
- All the spidery Necron models are cool!
- Solitaire and Death Jester are so full of win.
Oh, who am I kidding... I like all the models. MOAR!

Is 'Eavy Metal Calling?

They have pretty much hit it out of the park with that Bloodthirster (until you see the names... Wrath of Khorne? Wrathaxe? Bloodflail? Come on! Does it also wear Murderpants and a Deathvest?  ), but I have to second the Knight. Never before have I see a model painted in so many unique ways, each completely different from the last; it is a canvas for art more than any other model they do.
For chararacter, though, it has to be pretty much the entirity of the LotR range, with a few exceptions. Making a perfect replica of a real actor's face at true-28mm and actually having it be recognisable is remakable, and the attention to detail across the whole line is pretty much unparalleled.

Gargantuan Grotesque With Gnarskin

The Voidraven Bomber is a significant reason why I want to start a DE army. The plane isn't even that good for its cost but it looks so awesome. Scourges look awesome as well.
Most character? Not really sure. The Monolith is pretty iconic so I'll go with that. It's a giant slab of death and power imposing on your front line. What's not awesome about that (except having to fight it)?
On a side note, the new BT's cost has almost totally ruined my appreciation for the model. Khorne Daemons are kind of my main army but having to pay $115 for a single model just sucks the fun out of it. I'll stick with my goofy looking old BT, thanks.

Honestly, I find most of GW's best models aren't even made by " GW" anymore. Either they're discontinued models, or they're made by Forgeworld.
Take these examples:
Horus the Warmaster
Ramilies Starfort for Battlefleet Gothic
Well, pretty much all of Battlefleet Gothic stuff, really
This classic drunk dwarf
And the classic Noise Marine

I agree with the OP. I've never been more excited to build and paint a model than with this new Bloodthirster model. The one with black skin, red armor, raised axe and lower whip? Dear Lord it's beautiful.
I've never looked at a model and said to myself "I like the way the studio built and painted that model. I'm just going to copy it without doing any personal touches or conversions."

That is definitely one sexy model. I say it almost rivals the Forge World Bloodthirster.
My still all time favorite GW model is probably a tie between the Imperial Knight and the Terminator Chaplain. The Chaplain is just so iconic and the Knight is so much fun to paint and assemble.

I like the new bloodthirster models, I might eventually pick one up even through I don't play many daemons.
Personally I love my Archaon model. And the old chaos spawn models.

The new Bloodthirster model is cool, but the way they posed its legs doesn't sit well with me. Looks like Fred Astaire doing a heel click, lol. The flame pillar stand is pretty awful too.

DKoK are probably the pinnacle of Grimdark goodness. Most of the new stuff is too over-the-top cornball with really bad poses; meaning great for shelf trophies, but totally impractical for long term transport or play (most of the end of times big stuff, mainly).
Forgeworld continues to be the best sculpts, however they've given up on some of their better ranges (fantasy, xenos, etc.) for just marines after marines. Sad.

I'm a little bit in love with the Morghast models, I have 40k plans for those in the future.
Other than that, I still find the Eldar range beautiful, across the ages.
But a lot of the new End Times stuff is just breathtaking.

IMO the best models ever produced by GW are some of Fantasy 6th edition metals, specially the Dark Elf Range. Those Corsairs, Black Guard and Executioners are among my favourite models of all time. Cold One Knights were also great, specially the knights (sadly the cold ones got their 'godzillesque' design). The Storm of Chaos campaign also brought some great minis, like the Teutogen Guard, the Daemonettes and Vardek Crom. The golden age of Fantasy without a doubt.
That Bloodthirster is an ok model. The "hey look I'm flying" pose lets it down significantly though, and it also makes it not really suited for tabletop wargaming (like most of the latest fantasy big models, unfortunately).

The FW Hector Rex model is probably the coolest one I think is out there. Tons of character, fantastic details, and one bad ass Ordo Hereticus(?) inquisitor.
Perhaps the Imperial Knight. The model is beautiful, and the room for customization is virtually limitless. It's a good size, which makes it almost like a giant, blank canvas, ready to receive all you have to give.

Honestly as standard troops go, the Chaos Warriors have me envious. For an older model they look pretty good, indeed make even better looking Chaos Space Marines then the actual CSM kit.

I'm undecided on what my favorite sculpt is from GW/FW.
From Forge World, my favorite individual sculpts are Vulkan and Hector Rex, while the Death Korps models are my favorite overall set.
From Games Workshop, Inquisitor Coteaz, the Imperial Knight, and Smaug are my favorite sculpts.
From my collection, my favorite sculpt is the Carnifex (Terminator Chaplain is a close second).
Smaug is a very impressive sculpt. I've seen it being worked on at my local GW, and it is immense.

I was well impressed with Grukk Face-Rippa and Krom Dragongaze from Stormclaw, Both are the best models i've seen for their factions.
The Riptide has got to be up there as well.
From ForgeWorld Night Haunter/Conrad Curze has the most character of any model i've seen from either company. You could be a complete stranger to 40k and just looking at the model would tell you everything you need to know about him.

My current favorite model is the new Harlequin Shadowseer, which just came out this week. I was really floored once I saw it in person, completely assembled. It is a really beautiful character model - it captures both the sense of movement and vague dread that the Harlequins should inspire.
For showpiece models, the Imperial Knight is probably the best, although I do like the forgeworld variants quite a bit after seeing them in person.
In terms of classic "stands the test of time" models, I have to second the Carnifex.
