I've been considering bolstering my SM army with Grey Sues as a detachment, and I wish to inquire the following:

Which FA choice is better when it comes down to it?

Stormraven Gunship is both a flyer and a transport, giving it incredible tactical versatility. In addition, it can replace it's access points with more firepower in the form of Hurricane bolters to take on a more fire support-focused role.

On the other side of the table is the Interceptor Squad, Jump Infantry with Hammerhand and a fething personal teleporter.

So, which is the better choice?

The thing about 40k is that no one person can grasp the fullness of it.

Interceptors are expensive, fragile marines who's job is better done by a Dreadknight. Storm Ravens are mediocre gunboats that bring the only skyfire in the entire codex. Not exactly an ideal choice, but Storm Raven.

They both have their spot in lists.

The Stormraven, being the only AA the GK have, is decent at killing AV and other fliers. While it is still a flyer it can be blown out of the sky with a single shot. Some people like caring troops inside to jump out and assault, it can be a risky move. But always keep in mind the Raven can pop into hover and claim objectives if needed.

The Interceptors have their role as well. Yes, they are PA marines, but they have advantages. First they can shunt just like the DK, and just like the DK they can move 12". I personally like to just them in Maelstrom and take objectives as needed. Typically a 5 man squad with Incinerator. Though I have ran them with falchions before (how dare I) for fun.

So, it really depends on what list you are building and what you typically face. For me, fliers are not all that common so Interceptors have a place in my list.

I make bad decisions and think they are good.

I'd agree with FinkleLord, they both have their places. However, given that you're bringing them along with vanilla Marines, AA isn't much of an issue... and truth be told I'm not sure AA is going to be much of a problem for any Imperial force anymore with the Skitarii release.

In any case, as an allied force, a 5-man Interceptor squad with an Incinerator, 3x Falchions and a Hammer, costs 157 points, gives you 5 T4/3+ bodies with Jump Infantry movement, a once-per-game 30" shunt move, a S6/AP4 template, 6 S4/AP3 attacks and 2 S8/AP2 attacks, all of which have Force.

You could also swap the Daemonhammer for a Halberd+Meltabombs, making the squad 154 points. You'll lose AP2 and drop to S5 on the Justicar, but he gets to strike at Initiative and Force allows you to instagib things anyway.

Incidentally, this squad makes a potentially amazing counter to the new Skitarii Sicarian infantry; the above Interceptors are all AP4 or better on their most useful pieces of kit (the Incinerator and Force weapons), and can inflict Instant Death due to either S6 (Incinerator) or Force (combat). Sicarian infantry are one of the very tiny number of T3 multi-wound models in the game that aren't characters. The only other one I can think of off-hand is the DKoK Death Riders.

In either case, you'll cut through armor, cover, and FNP with the Incinerator, and against a small squad of Sicarians- or really any T3/4+ infantry- that's incredibly lethal. Fast moving flamers- especially S6 flamers- are pretty good, and Interceptors can bring not only one of the fastest such flamer units (30" shunt move go!), but also one of the deadliest (S6 Incinerators; plus Force weapons to make it prickly in an assault).

And soul fire.
The only thing better than killing them all right now with storm bolters and flame is to have the lave two models burn to death as they flee.

The Stormravens have those AP2 rockets, combined with the TL melta & lascannon, they actually become a threat to MC's and vehicles alike.

They also provide a good means to drop-off Paladin squads, which works especially well in a NSF.

Just saying...
