For modeling purposes, do you think it's legit to model a sternguard with a boltpistol instead of a boltgun (but still to assume that he has one for in game purposes)?

My reasoning: yes, because a sternguard unit has both a boltpistol and a boltgun as standard wargear.

What do you think?

Reminds me of the Chosen model (Powerfist model with a Horn) from Dark Vengeance or one of the Tyrannic War Veteran models. Both have a pistol or grenade in hand and the Bolter is slung at their side.

Wouldn't say necessary, but encouraged. Between the Heresy fluff of 'mag locked' to armor and other methods, no reason not to. It's very simple. Can even just attack it to the thigh or shoulder, no straps needed. Slap it on and call it a day to avoid issue.

In a do what you like sort of way it should be ok so long as they still look like stern guard.

The bolt gun needs to also be represented.

Yep.

Dont want "people" to suddenly see a bolt pistol shooting at double its length and then go wtf

People dont care as much about the pistols because the kit isnt supplied with enough of them same with frag and krak grenades

But bolt guns are a primary weapon. so people expect it.

I remember the old chaos codex didn't list a jump pack in the Raptor war gear. Technically they were jump infantry with regular backpacks. Good times.

Anyways, it's super easy to slap a bolter onto a waist or thigh and have it look legit.

I have a modeled sternguard marine who is using his bolt pistol over the bolter. But, he is also holding the bolter in his right hand, and firing his bolt pistol with his left.

Honestly it'd look like a CC marine instead of Sternguard with a pistol and no boltgun. I'd put the boltgun on somewhere.

In this particular case, it won't. I'm making the paint style drastically different for my sternguard vs. my regular marines.
