Learning to use orks is a bit of a tactical challenge - daft as that sounds - because tough as their forward armour is, their rear hull is made of rust and duct tape, and they have serious difficulty coming about.
Ork escorts also suffer from a narrow arc of fire and sustantially less manouvrability than most people's destroyers and frigates.
Getting behind the imperials was good flying - splitting into two groups and coming in from the corners is generally worthwhile, as your group doesn't have to worry about being flanked on one side, and once they turn inwards, each group covers the other's rear with its forward gunz.
You're quite right that orks can't fight broadside on. If you're up close and personal, broadside eavy gunz may help, but ultimately you must keep the forward armament aimed at something if you want to do meaningful damage.
Terror ships are incredibly cheap, tough carriers, but as noted you need support to pass command checks. Warlords are cheap and give rerolls - you should consider having plenty in your fleet for this reason alone, quite seperately from upgrades like powerfields or manic gunners.
And yes, there is some argument for pairing a Terror ship up with another ship with better leadership. However - in a smallish game, pairing up two ships requires both to use the same special order.... which if you want to do reload ordnance isn't much use if the other ship isn't a carrier.
Equally, pairing up your two terror ships into a squadron improves the odds of getting a decent leadership, but you can find yourself suffering more (a) from blast marker penalties, (b) from having all your launch capacity on one side of the board, or (c) being forced to Brace For Impact! locking down all the launch bays in your fleet....
Also - for orks - don't forget that if your opponent has anyone on special orders, you get +1 on command checks yourself.
Finally, always, always concentrate fire. On average it requires 2+ ships of the same class firing main batteries on a target to put any lasting damage on it.
