It seems that these detachments made up of formations are the new method of army building and I guess eventually every race is going to have something similar. I was wondering about how they might work for orks, who have a somewhat different style to other races.
For a start, having separate command formations doesn't seem very orky. Ork leaders are typically linked closely to their troops: the biggest boss has the largest mob of boys.
As a rough model of the ork command structure, you have a Warlord leading a Waaagh! which consists of many warbands plus other groups of specialists, such as Speed Freak Kults. Each warband is divided into households, which consist of a mob of boys, plus a few nobs and/or oddboys. The warboss is also the head of his own household, which is generally the largest one in the warband and has an unusually large number of nobs and oddboys (who form a retinue for the warboss). The overall Warlord of the Waaagh! is usually the most powerful warboss, with the largest warband.
So, how should that be reflected in terms of formations? It seems that there are two ways to go: either the core choice is a 'warband' and the overall formation is a 'horde' or 'waaagh!' or the core choice is a household and the overall formation is a 'warband'. The former would either mean making warbands a bit smaller than I think is 'fluffy' or having core choices which are relatively expensive compared to other races. The latter means having fairly small core choices, but I don't see that as necessarily awful.

Whatever hasnt been selling of late really. I'd wager a Killerkan formation, Deffkoptas (with a resculpt), Ork jets, Burnaboyz, maybe Stormboyz.

I think that would be a decent core formation. Bonus could allow you to manipulate the mob rule table and/or fearless on the turn you Waaaaagh!

A good ork decurion should take into account that orks are not a single army with a single design philosophy. Ork warbands can be created by mobs of boyz supported by specialists as your post suggests, but they can also be created by specialists banding together for survival and fun. Speed freak warbands could have mostly warbikers, buggies, battlewagons, deffkoptas, and trukks without having to carry around large mobs of boyz. A mekanised warband would be built around walkers supported by meks, burnas, and lootas.
The second option would be a more accurate representation of what an ork warband. Some source that I cannot remember off of the top of my head gave the number of boyz in a typical boy heavy warband at around 100. I would suggest changing the name from "household" which sounds posh and unorky to something more along the lines of "mob".

Well, I don't see them catering to every version. They could. Eldar had 3 core formations, but my money says they will not; and if you want to run a "decurion" style, you'll be forced to take a mess of boyz.
Just a feeling.

I'm just sitting here with my army of meks and speed freaks wondering if I should just go back to painting models because I like the pretty colours.
For a command formation you could use something along lines of something called "boss of the WAAAGH!":
1-3 Warboss/Thraka (One of them must be your warlord)
1-3 Big Mek
1-3 Nobz
0-3 Painboy
0-3 Mek

Orks are all about one thing: numbers. Whether that's number of shots, number of units, number of vehicles, or number of models.
I honestly wouldn't be surprised if you get free squads of Ork Boyz, or free additional models, for taking the "Ork Decurion".

Was gonna suggest much the same - Clan orientated choices.
Army bonus is to be fearless above 10 models - I just hate rolling seven sets of dice to resolve that stupid mob rule table
Oh, also, warlord will probably cause Fear.

I feel like the clans shouldn't represented that way. Instead clans should be like the marine chapters. Much like a marine player takes salamanders as their chapter getting the bonuses from that, orks should be able to take speed freaks and get army wide bonus's.

I like both of those ideas!
However, what's actually going to happen is that Orks will get skipped for a good long time, hanging on with this subpar book. When they finally get around to doing Orks again, the design philosophy will shift (just for a few books, just long enough to catch Orks) back to something more balanced.
They'll say: "Ooops, took this stuff way too far, let's reel it all in... starting with Orks!"

They then release a codex which acknowledges Bloodaxes as the spiritual liege of all ork clans.
