So is there any way for any kind of bikes 2+ armor?
I haven't seen anything in the SM, BA, GK, or DA codexes.
Are there any terminator bikes? Or bikes that deep strike?

Only HQ got access to 2+. And SW but as calvary.

Eldar warlock conclaves on bikes can have a 2+ save. They have a 3+ as standard and have a 50% chance (if they have at least 7 members) of rolling the protect spell to increase that by 1. Also a warlock in an ordinary bike squad has a 1/6 chance of getting the same spell.

If you count cover saves then DA (and Ork Warbikers/DE Reavers) can have 2+ saves, otherwise you're limited to the aforementioned posts.

Daemonheart from Crimson Slaughter will give your bike Lord/Sorc a 2+

If a psyker generates sanctuary, they could cast it on a SM bike command squad equipped with storm shields to buff their invul to 2+.

I think certain SM HQs can have Artificer Armor and a Bike.

Regarding your other questions, no Terminator Bikes and no Deep Striking ones but there are certain ones that can Outflank if I'm not mistaken.

Legion Scimitar jetbikes have a 2+ save, but they're not available to 40K marines (but makes you wonder why Sammael isn't 2+, then).

generally no without getting lucky on psychic powers.

This is a good thing as bikes are powerful enough as is

When did they change that? I could swear the crusade army list has them pegged at 3+.

They're a 2+ in LACAL, at least. I would have to dig out my other HH books to see what their original printing might have been.

Original printing had them at 3+, they bumped them up to 2+ in the Red Books and Legiones Astartes Crusade list book.

Well, I'll be. You're right. Just got home and cracked open the LACAL and they are indeed 2+.

Wazzdakka used to have a 2+ armor save. Out side of that. Space marine captain/chapter master in Artificer armor and bike.

Back in 3rd edition, attack bikes had a 2+ save. The terminators of the FA world.

Yes, but when wazzdakka came out he was mega armor warboss riding a bike with a battle kannon. He had a 2+ save and every time he fired the battle kannon it shoved his bike back.

There is the Armor Indomitus relic... Pricey but you've got the 2+ and it can go to 2++ for one turn. Nice on a Librarian with Precognition.

A techmarine on a bike will give you a 2+ armor save. Not a bad way to run one.

In the previous Ork codex it stated why Warbosses couldn't have both mega armor and a bike:

"They'd probably fall off a lot"
