Hi all, new to 40k here
I want to get into 40k and I really really like the idea and style of the adeptas sororitas army. However I am unsure whether to buy them or not considering the rumours that they may be removed or re released soon...? Any thoughts? Still new to all this so sorry if I seem ignorant of the subject

Well those rumours have existed for a looooong time.
Honestly, in my opinion, it is likely the sisters of battle on the GW site right now are more than likely the only ones you will see for a long time.
So if you want to spend a lot of money on an army thats hardly had/has support then sure why not. But if you want an army thats treated like all the others (updates, new models and plastics etc) then avoid the Sisters of Battle.

I'm of the mind that its more likely they get squated than a new set of models in the near future. Not saying they'll get discontinued, but I doubt they'll go plastic soon.

Pick up a squad or two for now and take them as allies for another imperial army. That's what I plan to do.

Any rumors on SoBs have dated back about 8 years now, especially anything about "The plastics not working out".
However, if you must field SoBs, you can actually make plastic versions for yourself pretty easily if you got a Dark Eldar Pal. Ask for all the female torsos and buy a box of Kabalite Warriors. Shave off all the spikes, glue a SM backpack to them, and give em a bolter. Use a Dark Eldar female head and boom, cheap Plastic SoBs.

I've seen another nice conversion of third party female heads and normal marine bodies. Practically speaking the busty power armor doesn't make much sense.

It makes sense to me, since the SoBs were made because the Ecclesiarchy weren't allowed to have "Men Under Arms". Giving them Power Armor specifically to show off that they're girls would further fit into that.

I have access to 3d printers at work, I can technically construct my own ( but too afraid to due to potential legal issues ) and frankly being new to 40k I lack the skills to pull off a conversion :(. I guess ill settle for normal space marines or something then..... oh well

honestly I have no idea, aussie laws on it are vague at best. Ive heard of people printing custom equipment for their armies but not completely printing them out.
I guess Ill have to do some more research to see if another army takes my eye. (Honestly its so frustrating them advertising a completely outdated product.....)

3d print law is very vague since the law lags behind science but what every you decide, don't sell them to others. That said personal use is usually an exception, at least in america.

Given that there is no way to get a new immolator now (other than buying an exorcist, but screw that) since it's completely gone from the AU site, you'll be relying on 2nd hand stuff if you want immolators (and I'd suggest that you do with the current codex).
There's also a bunch of other stuff missing from the AU site for sisters. There is only 1 pose left for any special or heavy weapons, most of the priest options are unavailable and there's only 1 cannoness option left now too.
Some silver'ish lining though, given that you're in Aus, it's only about 20 - 35% more expensive than any other army to collect sisters instead of twice the price if you were in any other country. Lucky country, eh?

Just buy the Battle Sisters you want and build the army you want. We're plenty playable and actually very strong in gameplay terms, and this hobby is a long term monetary investment any way you cut it.

If they are going to be updated, it'll be an overhaul that leaves few things behind, and I wouldn't go for it unless they are updated.
