It's any way you want to paint it. Pick a color scheme and stick with it.
For guard you can't go wrong with a grey/green mix, but ithe really is all up to you.

Dark angels 70/100 of deathwing, 50/100 ravenwing, 80-100 3rd company
IG +6k pts
and a sampling of different armies
warmachine, 40-50 points of:
protectorate, legion, and convergence armies

If you want to paint them the same as they appear on the box then GW usually have a suitable paint bundle up on their website.

Otherwise it's do whatever you feel like.

Remember there are loads of paint brands out there that aren't GW and most of them give you more paint for equivalent or less money.

Vallejo's Model Colour line has lots of military colours. Various greys, drab olive colours, browns, khakis etc. as well as almost anything else you could want.

Reaper Master Series is one of my favourite lines due to variety and guaranteed matte finish.

If you look here, you can see the paint bundles. They go Base, Shade, Layer, Layer, Dry.

Cadian paint bundle(for the green):
Castellan Green, Athonian Camoshade, Loren Forest, Straken Green, and Underhive Ash

Khaki:
Steel Legion Drab, Reikland Fleshshade, Tallarn Shade, Karak Stone, Terminatus Stone

Steel:
Leadbelcher, Nuln Oil, Ironbreaker, Runefang Steel, Necron Compound

Flesh:
Ratskin Flesh, Reikland Fleshshade, Bestigor Flesh, Ungor Flesh, Eldar Flesh

Also look at coloured primers. Can be bought at Halfords, B&Q or search on-line for Army Painter (full RRP: http://store.warlordgames.com/collections/paints-painting/paint-spray). This will save you loads of time!

Imo, some of them aren't really needed. Here's what I'd go for:

Armor: Castellan Green->Agrax wash (brings out those details a lot better)->Castellan Green->Loren Forest.
Khaki: Zandri dust->Agrax wash->Zandri Dust->Ushabti bone->Maybe Screaming Skull
Steel: Leadbelcher->Nuln Oil->Runefang Steel (never seen the need for Ironbreaker and Necron Compound)
Flesh: Bugman's Glow->Reikland Fleshshade->Bugman's Glow->Cadian Fleshtone->Something brighter.
Black: Abaddon Black->Eshin Grey (why would you want to wash black with black?)->Dawnstone.
White eagle signs: Celestra Grey->Nuln Oil->White Scar

If you were to really want to replicate GW's scheme, I would recommend watching Duncan's Painting Cadian Shock Troops tutorial.

The listed paints are the Sheer Black, Steel, Flesh bundles plus Gold and Blood Angels

Inside your mind, corrupting the pathways

To be honest, you can get a really good looking model with a single colour and an appropriate wash. You don't have to layer 5 different paints to get a nice red; just paint it a mid-light red, then wash with a dark red or watered down black.

Hell, my Guard were primed white and painted with two colours of wash (sepia for the armour and mud for the cloth) and then a red ink for the grenades and a white paint for the unit markings. A dot of gold with a mud wash for the Imperial badges and done for a table top looking model that could easily be gone back to at a later date to improve with further details

GW rarely sticks with the paint bundles in the Paint Splatter articles or the Warhammer TV tutorials. For example, when painting red they will almost always start with Mephiston or Khorne Red, wash it with Nuln Oil and then highlight with Evil Sunz Scarlet followed by Fire Dragon Bright.

One great thing about GW's paints is that there are many tonal variations that look great in combination, and varied in appearance if you use different highlights, without having to mix custom colors. The paint chart is useful as a starting point, but it shouldn't be used as gospel.

To take Ghaz' example, washing with Nuhln or Agrax gives you a markedly different shade, and highlighting with Fire Dragon Bright looks very different from highlighting with Cadian Fleshtone on the brighter end, or Wild Ryder Red on the more muted end.

A lot of it is experimentation to find what you personally like.
