I was at a game store the other day and started looking at Infinity models and for some reason to me they looked larger than 28mm heroics....
While doing a search on scale comparison for some other models, someone had some GW IG next to some Infinity models and they were the same height, but slimmer.
So do my eyes need to be checked or is there something I'm missing?

GW is 28mm heroic scale which means the miniatures are usually bulkier than their counterparts. Infinity miniatures are indeed slimmer due to the real human proportions used.

Yes, you're missing something. Corvus Belli have shifted the scale a few times in the games lifespan. 1st edition miniatures were herioc 28mm, though not quite as bad as GW's proportions. These earlier models are a bit smaller than GW models still, but chunky. 2nd edition were transitioning to 28mm true scale. These models are pretty small. They'll look tiny compared to GW models. Proportionally they're much better. 3rd edition made a change to 32mm true scale. These mdoels are standing pretty much the same height wise as GW miniatures (GW say they make 28mm models, but they haven't for a long time), but they're still proportionally much better. No pumpkin heads and ham hands.

It may depend on what models you're looking at. Some heavy infantry tend to be bulkier and taller than lighter counterparts. There are, of course, some outliers that are even bigger like Morat HI, the Umbra, Azrail, Achilles v2, etc.
Warhammer has a strange habit of putting Imperial Guardsmen, Eldar, and Space Marines at about the same height with gigantic hands.
Infinity is 28mm.
Put an Infinity model next to a 32mm model, and you'll notice a drastic scale difference.
Put an Infinity model next to a 28mm heroic model, and they're about the same size with the heroic having exaggerated features.

I really thought the figures I looked at were 40-54mm in size! They were huge! It must have been me

It was. N3 brought a shift that's closer to 32mm. Put an Icestorm model beside an N2 model and it's nearly a head taller in some cases (no, not against the Corregidor set, they're worse).

As above, infinity is somewhere between 28 and 32 mm truescale. With newer miniatures being larger.
I suppose they're getting larger because 28mm truescale is actually pretty dang tiny. 32mm truescale lets you have a more detailed model because its larger but you don't end up with wonky proportions.

Rather than just making some assertions, how about we actually look at some photos?
Icestorm Alguacil (#3) alongside several N2: CP models from assorted factions (#1 & #4 are shorter than original, as I redid their feet without battle heels.)
Icestorm Alguacil (#2) and Reverend Healer (#4) alongside several N2: HS and N2: CP models:
Icestorm Grenzer (#1), Alguacil (#4), Mobile Brigada (#7) and Healer (#9) alongside N1, N2, N2: HS, N2: CP and Dire Foes models.
The difference in the N3 models is in their style and bulk - other than the new HI, their height is in the same range as it's always been. Even the Reverend Healer, who had a mm or two added so she squared up better against the Father Knight, is still shorter than the N1 Ghulam Doctor (one of the oldest models in the range) and Anyat/Sekban (who has also had heels removed).

The proportions of models can affect how tall they look. Because tall people often have proportionally smaller heads and longer legs, such things on a model can make it look proportionally taller. Infinity models can naturally look that way if you're used to the exaggerated proportions of GW's offerings - their high level of detail helps too.
I can assure you though if you actually put them alongside 54mm scale models, you notice the difference!

You could have been looking at some of the super huge Heavy Infantry models like the Azra'il, Yan Huo and Sogarat. They are massive.

Also the Umbra Legates for combine and the new Achilles are both not normal "human sized" figures.
