I am planning my (typical) Space Marine biker army and need a little background on the battle companies.

I know that 6th Company can go full bike if necessary but I really don't like Orange trim.
7th Company pilot the landspeeders and Stormtalons.

And the 8th Company are the Reserve Assault marines. With a simple Grey trim. A much better choice.

But is there anything per the Codex Astartes (against the fluff) about Assault Marines even taking bikes?

I would assume a White Scars Assault Company wouldn't think twice about using Bikes but what about the Ultras and their successors?

I think in general the marines who ride bikes are typically also the same ones that use the assault cent suits as well as the assault marines.

This was beautiful

On topic, I believe the assault companies are responsible for bikes, speeders and jump pack/chainsword to face use. Although I Could be wrong. My SM fluff is firmly cemented in 3/4th edition in a lot of cases

According to the newest codex, Battle Company Assault Marines are expected to know how to use bikes in combat, so yes even ultramarines have bikers outside of the 6th company. As for land speeders, there's nothing explicitly saying so, but the Battle Demi-Company allows you to take landspeeders over the assault marines, so I assume /someone/ knows how to pilot speeders in a Battle Company (Although the same slot also allows Assault Centurions, which I doubt are used by assault marines).

The real question is why aren't all marines riding bikes. A bike would cost only a fraction to what a space marine grade power armour would cost.
Or is the only bike known by the IoM also fusion powered... ( Never heard of this but I can almost feel it coming.)

The assault marines in battle companies can ride bikes/speeders when the need calls for it. So if you wanted to keep it strictly fluffy, you could have 20 guys on bikes belonging to the 2-5th company.

Traditionally Assault Marines have also been trained in use of bikes and Land Speeders, dating back to 5th Ed codex. 6th Company was Tacticals/Bikes, 7th was Tacticals/Speeders and 8th was Assault Marines/Bikes/Speeders, with Assault Squads in 2nd-5th also being trained in both (and presumably Tacticals too as they are the rank after Assault).
