The one commonality of undead armies in AoS is if you pick off the characters they fall apart pretty quickly. Thus, you will want to bring tools to do that. Undead love their magic, so I would recommend bringing a Hurricanum, and Luminark, and another wizard or two. Both the Hurricanum and Liminark have shooting which can pick off characters quite well, while buffing your other units and wizards in range so you can match the enemy magic (at least somewhat). You are probably going to want some solid front line troops that can hold off the enemy units for a few turns while you deal with the characters. Staying with humans, your best bet is a huge block of freeguild guard with swords and shields, buffed with inspiring presence for no battleshock (or the spell off a battle wizard of light). Outside of humans, dispossessed ironbreakers have a 4+ save, ignore rend -1, and can re-roll saves as long as they didn't run or charge. Couple that with mystic shield and they become extremely difficult to kill short of mortal wounds. On a different note, paladin decimators from stormcast tend to make undead very sad due to how their axes work. A witch hunter or two is also a good buy; go for the double-pistol loadout because they will be a massive target in melee, then put them behind your front lines to shoot at vampires that try to get engaged in melee.
Worth noting that with this overall strategy you will want to keep your army bunched up pretty tightly to keep everything in range of Hurricanum/Luminark buffs and to lure enemy vampires in range of the witch hunters or force them to keep out of melee.
