Hello mates. Not really a list yet; more a request for advice. Hoping to put together a little Guard army, and my key requirements are:
Loads of regular Guard infantry;
As many Leman Russes as possible (I like the look of the standard guys and Demolishers, but am quite happy to be told why other variants are a better idea.;
At least one Chimera too, cos I like the models.
So what's the best way to achieve this in a 1,000pt army? I've never played Guard before, so don't really know what I'm doing. Are upgrades on Guard/Command squads worth it, or am I just better off packing in as many bodies as I can?

In general, more bodies is better for Imperial Guard. Many of the Command Squad upgrades are not at all worth the points.
For 1,000 points you could take something like this:
Astra Militarum - Combined Arms Detachment
HQ
CCS 155
-3 Meltaguns, Chimera with Multi-Laser and Heavy Flamer
Troops
PCS 50
-Lascannon
Infantry Squad 70
-Lascannon
Infantry Squad 70
-Lascannon
Veterans Squad 185
-3 Plasmaguns, Grenadiers Doctrine, Chimera with Multi-Laser and Heavy Flamer
Heavy Support
Leman Russ Exterminator 150
-Hull-Mounted Heavy Bolter, Heavy Bolter Sponsons
Leman Russ Exterminator 150
-Hull-Mounted Heavy Bolter, Heavy Bolter Sponsons
Leman Russ Demolisher 170
-Hull-Mounted Heavy Flamer
1,000
This list is far from top tier tournament quality, but it's totally playable in 7th edition. Leman Russ Battle Tanks and Demolishers aren't the best choice due to unfavorable ordnance rules in 7th ed, but they are still usable. The general plan for this army list would be to advance with the CCS, Veterans, and Demolisher while the Infantry Platoon and Exterminators provide fire support. I chose Exterminators for this list as they are the most versatile Leman Russ variant - they can target infantry, light armor, and flyers without issue.
If you're looking for something with more aggressive infantry, you could run several "blobbed" platoons of 30-40 Guardsman, each squad having a Power Axe, Meltagun, and Meltabombs and the whole blob lead by a Ministorum Priest. These aren't the best combat units but they can take on almost anything in the game and are very hard to remove thanks to the Ministorum Priest.

Thanks man, this looks like a pretty great starting point for the sort of thing I'm after! Not worried too much about how competitive it is, so much as how much it feels like Guard.

Oh this will definitely feel like guard!
The Exterminators don't look very cool but they are my favorite Leman Russ due to their versatility and consistency.
I would try to fit in a Vendetta and 1-2 Wyverns at 1,500 points or so. Vendettas provide the best anti-air in the codex while Wyverns offer extremely cheap and consistent ant-infantry firepower that ignores cover.

I'd recommend a large unit of conscripts backed by a priest/commissar. Pretty effective and feels very appropriate to be fighting the horrors of the 41st millennium with bayonets
