Would just like to confirm that I have jinked, does that mean I can not use psychic shriek in my next psychic phase due to it being an auto-hitting power that is forced to fire as a snapshot?

It does not auto-hit. It just happens, if you use the GW FB faq currently. Something that just happens and has no profile can't Snap Shot because it has no profile.

The FAQ says that Witchfires without a profile (including Psychic Shriek) don't roll to hit but doesn't say they aren't treated as shooting attacks the way other Witchfires are, and according to the definition of Snap Shots any shooting attacks that don't use BS for a to-hit roll can't be fired as a snap shot.

This is correct. let's look at this step by step.

1) Shriek is a witchfire, witchfires are shooting attacks
2) Shooting attacks need to hit, whether by rolling BS, or automatically hitting
3) Auto-hit shooting attacks cannot be resolved it the circumstance would normally call for a snap-fire
4) Jink forces all shooting attacks to snap-fire

Therefore, Shriek cannot be resolved if the user has Jinked.
