So ive played infinity when it first came about, then again in 3.0. While the minis are some of the best in the industry, 3.0 really seems to boggle down with our group and we prefer smaller more skirmish like, without the 50000 weapon/ammo/hack/special abilities.
Are there any systems out there that I could just my figs for, scifi skirmish but not as deeply heavy?

There's a number of good generic sci-fi rulesets that we use at my club.
-Shock Force (Wargames Vault as Pay-what-you-like) is a great pulpy ruleset for platoon level actions. Very flexible system with a neat "Roll ___ Keep ____" system for all dice rolls. It was written in the 90's and finally is availble again as of last month. This would be my first choice. Lots of included army lists to get you started or you can stat your own.
-In The Emperor's Name (Free online) is techincally aimed at 40k players, but it's a great generic game engine aimed at small warband combat. It was so successful as a free system that they converted it to D10 ported it into a steampunk/victoriana setting and sold quite successfully as "In Her Magesty's Name".
-Warpath is about to come out in a new edition. Technically of course it's designed for mantic figures and it has no unit creation mechanic, but it's a great straitforward sci-fi system and has lots of supplied army lists.
Fubar is mentioned at the link above and though I've never used it, I've heard good things about it.
One other system worth checking out is "Blasters and Bulkheads" It's based around the Supersystem/Goalsystem engine and though I haven't tried the current edition, the last edition was fun. It's very much aimed at a pulp feel with very proficient heroic characters and squads of faceless mooks.
Also, be aware that one thing you are going to find with simpler systems is that your various factions are going to end up being much more similar. Most games give you some flexibility, but once a game reaches a given level of abstraction, all the human armies start feeling more and more similar.

Judge Dredd is flexible and free from Warlord's site.
Rezolution is good, although it lacks creation rules so you have to stick with their unit types.
Star Mogul can be found for download online.

This Is Not a Test is a post-apocalyptic skirmish/campaign game (think Necromunda) that is explicitly designed to work with almost any miniatures you can dig up. Most of the Infinity miniatures would make great Preservers, and there are a few other warbands that could work as well.

The big question is what you mean by "simpler", and how much effort you want to put into adapting the ruleset.
In my case, I had Heavy Gear minis and wanted a radical streamlining, resulting in KOG Light. It's very HG-like, and very streamlined.
I suspect one could do something very similar with Infinity, keeping the core mechanics concepts and stripping away complexity.
Otherwise, one might just focus on reskinning One Page Rules or equivalent.
