Does the Savage Big Boss warscroll in Battletome Bonesplitterz replace the Savege Big Boss warscroll PDF found on the GW site?
The PDF has more options for the Savage Big Boss, which does have the Binesplitterz key word. Can I choose from either?
I like the idea of having more than one way to model the bosses.

Personally I would use the most recent one, which looking at this would be the Battletome Boss.

If they're both currently available, they're both currently valid. There are multiple versions of many of the Stormcast Warscrolls, all of which are valid for use.

GW seems to be putting out some Warscrolls showing ALL options and other more specific ones showing limited options for specific models.

I though I'd be stuck with that. Which I don't like. So many warscroll battalions require a Savage Big Boss. I'd hate to have them all exactly the same.

Do you mean the warscroll found HERE with the Savage Big Boss in the online store or the one in the Orcs & Goblins Warscroll Compendium? Regardless, the Age of Sigmar FAQ covers what to do if you have two different warscrolls for the same unit (second question under 'Warscrolls and Warscroll Battalions', pg. 6 of the FAQ).

I hadn't remembered there was an FAQ. That more or less clears it up. Even with it's ...language. Not sure what they're getting at with the "more convenient for your opponent" bit.
I'd have to have the warscroll on hand.

The 'more convenient for your opponent' just means that most people will usually assume you're using the most recent and most available warscroll for any given unit. When I play, I add my opponent's units to the "My Battle" feature of the AoS app so that I can reference their stats and abilities during a game. When the opponent is using an older war scroll, I can't do this. It becomes inconvenient.

I solve this by bringing two printed copies of all my warscrolls and offering my opponent the option to keep one copy on his side of the table.
